1 varkens procureur
Zout
Ca. 100g roomboter
Buatter โn Garlic rub (Turnpike)
Bieslook
Peterselie
Benodigdheden:
Barbecue met deksel
Thermapen

Snijplank
Bereidingswijze:
1. We snijden eerst het deel uit de procureur. Ga aan de zijkant opzoek naar het varkenshaas vormige deel. Snij deze er over de lengte uit. Vlies deze vervolgens schoon.
2. Steek de barbecue aan, stook deze naar +250ยฐC. Richt de barbecue in voor zowel direct als indirect gebruik.
3. Bestrooi het vlees rondom met zout.
4. Grill het vlees aan alle zijden mooi bruin.
5. Verplaats het naar de indirecte zijde om te rusten en door te garen tot een kern van ca. 65ยฐC
6. Maak in de tussentijd de โprak-boterโ door de boter, de rub, bieslook en peterselie naar eigen smaak lekker door elkaar te โprakkenโ. Hou deze buiten de koelkast tot gebruik. (Of haal deze er tijdig uit om de boter op kamertemperatuur te gebruiken)
7. Snij het (warme) vlees in dunne plakjes en verdeel je prak-boter erop.
8. Serveer direct!
*Wij hadden het vlees icm sperziebonen en krieltjes. Een echt AVG-tje, maar dan met een Poor manโs steak!
