Havuç ve kabağı rendeliyoruz.
Ispanağı doğruyoruz, soğan, salça ve 2 kaşık sıvı yağ ile soteliyoruz. Tuz ve biberi ekliyoruz.
Süt ve yağı ayrı bir kapta karıştırıyoruz.
Borcamın tabanına yağ sürüyoruz 2 adet yufkayı serip üzerine sos ve harçtan ekliyoruz. Malzemeler bitene kadar tekrar ediyoruz. Son olarak üzerine kalan sosu sürüp 200 derece fırında üzeri kızarana kadar pişiriyoruz.

1- Patlıcanları ve patatesleri orta kalınlıkta doğruyoruz ve bir fırça yardımıyla arkalı önlü yağlayıp tuzluyoruz.
2- Köftesi için; bir kaseye soya kıymasını koyup üzerini geçecek kadar kaynar su ekliyoruz ve şişmeye bırakıyoruz
3- Şişen soya kıymasını süzüyoruz ve üzerine doğranmış soğanı, sarımsağı, galata ununu ve unu, salçasını, baharatlarını ve yağları da ilave edip güzelce yoğuruyoruz.
4- En son elimize istediğiniz büyüklükte köfte alıp çok kalın olmayacak şekilde yassı şekil veriyoruz.
