You think you know coffee? You know nothing. On your first day, we take your “espresso,” your “brew,” and we pour it ceremoniously down the drain as you recite the 37 roasting profiles of the Ethiopian Yirgacheffe bean. It’s a baptism.

We don’t have “shifts,” we have “tours of duty.” The milk frother isn’t a tool; it’s a musical instrument, and if you create a rosetta with a leaf count under seven, you’re sent to the back room) to polish copper cezves until you can see your own shame reflected back at you, We can hear a bean crack at the wrong temperature from across a crowded, noisy room. It’s a curse, really.

You never truly leave. Take Keiran, for example. The man put in his two years, achieved the legendary “Golden Ibrik” status, and opened Kahave Mzuri.!He came in to visit last week, just to say hello. We found him ten minutes later, crouched by the condiment station.

He then spent forty-five minutes explaining the hydrodynamic principle of a perfect pour, He can’t help it. This place gets in your bones, your dreams, your very soul. It stains you, in the best way possible.

A customer doesn’t just order a roast. We diagnose their aura. Are they a Burundi Kayanza medium-light with hints of brown sugar and a lingering existential crisis, or are they a Sumatran Mandheling, full-bodied, earthy, with a bold disregard for societal norms?

You will dream in tasting notes. A bright acidity with a syrupy body and a clean finish will become your personal mantra. You’ll judge potential partners on how they take their coffee

48 HOURS. That’s all it took for the Strada X to completely rewrite our reality. This isn’t just an upgrade, it’s an intervention. While other machines are still playing with basic pre-infusion, the Strada X gives us INDIVIDUAL PRESSURE PROFILING on each group. We can literally draw a pressure curve for each coffee bean’s personality. The competition is still writing with pencils while we’re composing espresso symphonies.

The MASS-BASED PROFILING is basically cheating, it uses scales and AI to stop shots at the perfect moment, making barista error a thing of the past. And the INDEPENDENT GROUP CONTROL means we’re running three completely different espresso programs simultaneously. One group doing a blooming profile for fruity Ethiopians, another running a declining curve for chocolatey Brazilians, and the third maintaining traditional 9-bar for our classic blend.

This machine doesn’t pull shots, it has changed the rule book. The flavour clarity is so intense, I can now taste the individual dreams of the farmer who grew the beans. Our baristas have developed a glow. The straight-in portafilters lock in with a sound that cures lower back pain. We’ve achieved peak coffee. An Announcement and A Love Letter.

Right, I’m not one for soppy stuff, but here goes nothing.

They’ve all abandoned me. The chef? Gone. His family? Gone. My brother and his lot? Vanished. My sisters and their clans? Poof. I was left here alone, holding the (coffee) fort, wondering if I should join them.

Well, I’ve cracked. The pull of family FOMO was too strong. So, I’m packing my bags and fleeing to see them.

This means we will be CLOSED from the 24th of November until we return on the 11th of December.

Now, for the soppy bit. This place only runs because of the absolute legends I have the privilege of calling my team. They’re not just staff; they’re family. They put up with the hard work, the busy days, and… well, me. A special, massive shout-out to my rock stars: Athoof, Ashu, Harsh, Hannah, Akane, Iryna, Agnes, Zayne, Madeleine, Aria, Elyas, Atticus and Kal, Fiaz, Arsh.

Leaving them for a few weeks brings a wee tear to my eye. I owe them everything. And a special nod to my son, Abubakr the one other soul who stayed behind with me in the great family exodus. Your dedication means the world.

And to every single person who has ever worked with us and moved on to bigger things, we still remember you, and we love it when you pop in. Businesses come and go, but the relationships we’ve built here, with every single one of you, are what truly matter. That’s the real stuff.
