Ingredients:
1 Ontario pork tenderloin
1/4 cup honey
2 tbsp apple cider vinegar
2 tbsp brown sugar
1 tbsp yellow mustard
Handful of mini potatoes, halved
Vegetables (I used 1 head of broccoli and 1 red pepper, chopped)
Olive oil, salt + pepper
Instructions:
Preheat your oven to 400°F (200°C).
In a small bowl, mix brown sugar, cider vinegar, mustard, and honey. Add salt and pepper to taste. Coat the pork tenderloin in the sauce.
Toss potatoes and veggies with olive oil, salt, and pepper. Spread on a foil-lined baking sheet.
Place pork on a shallow foil-lined pan (or on the same sheet if it fits). Roast for 20–25 minutes, until pork reaches an internal temperature of 155–160°F.
Let the pork rest for 5 minutes, then slice and serve with roasted potatoes and veggies.
Optional: add a dollop of cottage cheese and any leftover honey mustard sauce.
Ingredients: Pork Tenderloin
• 1 pork tenderloin
• 1 tbsp olive oil
• 1 tsp Dijon
• 1 tsp thyme
• 1 tsp rosemary
• 1 clove garlic, grated
• 1 tsp salt, ½ tsp pepper
• 1 tbsp butter (to baste)
Turnip-potato purée:
• 3 white turnips (peeled, chopped)
• 2 potatoes (peeled, chopped)
• 3–4 tbsp butter
• ½ cup warm milk
• ¼–½ cup warm cream
• Salt, white pepper
Cognac Cream Jus:
• 1 shallot (minced)
• ¼ cup Cognac
• ⅖ cup chicken broth
• ¼ cup cream
• 1 tsp Dijon
• 1 tsp honey
• 1 tsp cold butter
• Salt to taste

3 lbs Ontario Pork Shoulder, cut into 2” cubes 2 large onions, peeled and roughly sliced 6 cloves garlic, peeled and cut in half 1 bottle of dry red wine Fine kosher salt
2 tbsp butter, room temperature 2 tbsp flour Red wine vinegar
Preheat oven to 325 f. Place an oven/stovetop safe braising dish over high heat until extremely hot. Generously salt pork cubes. Add 1 tbsp of veg oil to the hot pan and place pork in an even layer. Sear without moving for 1 minute. Flip pork and repeat. Do in batches, do not overcrowd the pan or you will not get a nice sear!
Reduce to low, add onion/garlic to pan with pork. Add the bottle of red wine, the meat should be at least ¾ submerged. Cover with a tight-fitting lid or tin foil and braise for 2.5 hours. Transfer pork dish to the fridge (if you don’t have time, skip this step but gravy will taste better if you allow fat to harden so you remove it).
Transfer the pork to a clean saucepan. Some onion will stick to the pork, that is ok! Strain the liquid into a new saucepan, disposing of onion, garlic, and any solidified fat. Reheat liquid until boiling. In a bowl, mix flour/butter to make a smooth paste – this is called a Beurre Manie. To strained liquid add half the paste, 2 tsp red wine vinegar, 2 tsp salt. Whisk to combine. Taste the gravy then add more salt/vinegar if needed. If the gravy is too thin, add another 1/2 of the beurre manie until you’ve reached a perfect consistency. To finish, drizzle gravy overtop of pork, reheat in saucepan at a very low heat with a tight fitting lid. Transfer to individual bowls and top with more gravy. Optional: garnish with scallion or chives. Enjoy!
