Small details, but crucial ones that make all the difference in getting a great result.
يُعد خبز الباجيت من أنواع الخبز البسيطة في مكوناتها، لكنه يتطلب إلمامًا جيدًا بالتقنيات الأساسية مثل تشكيل العجين وطريقة شقّه قبل الخَبز. وبما أنه يُحضّر باستخدام الخميرة الطبيعية، فإنه يحتاج إلى وقت كافٍ للتخمير، ويفضَّل أن يكون الجزء الأكبر من هذا التخمير بارد (داخل الثلاجة) لتجنّب زيادة الحموضة في النكهة.

المطبخ بالنسبة لي كالمرسم تمامًا؛ أكون وحدي فيه حتى أنسجم مع وصفاتي ومكوناتي بصفاء تام، وكأنني أرسم لوحة. لأن كما تقول “منى واصف”: الطبخ بدّو هداوة.
وتأتي الهداوة من شغفٍ وعشقٍ خالصٍ للمطبخ، لدرجة التفرد فيه والسكن داخله، وكأن البيت كله في حضنه. وبدل أن نطبخ طبخًا عابرًا سريعًا، يصبح مكانًا نخفض فيه وتيرة الزمن، ونتأنى، وننعم بالسكينة، فنطبخ ببطء واستمتاعٍ كامل. أحب أن أكون وحدي في المطبخ، وأن تكون خطوات الإعداد كلها لي، بين يديّ ومن قلبي، وتلامس روحي؛ لتصبح أكلاتي لذيذة في النهاية كما آمل وأتمنى.

بهية عثمان شاركت في تأليف موسوعة أصول الطهي و مجلة حواء مع نظيرة نيقولا، ولم تأخذ ذات الصيت التي حصلت عليه أبلة نظيرة رغم أن دورها لم يقل عنها.

الجدير بالذكر أن بهية عثمان عندما سافرت لإنجلترا لتتعلم التدبير المنزلي، كرهت الطهي بسبب أسلوب الإنجليز و طريقتهم في إعداد وطهي الطعام. حاولت أن تدرس العلوم ولكنها تأخرت عن التقديم ولم يعد أمامها سوى قسم التدبير.
وبعد أسابيع قليلة وقعت في غرامه، خاصة مادة الطهي، كون قسم التدبير يحتوي على (إدارة منزل/صحة/إسعاف و تمريض/تربية طفل/تفصيل و خياطة/تطريز).. لكن الطهي كان المفضل لديها.

عادت إلى مصر عام ١٩٣٩ وشاركت في تأسيس المعهد العالي للتدبير المنزلي في جاردن سيتي في القاهرة، مع نظيرة نيقولا والعديد من رائدات التدبير.

Everything in life takes practice to truly master. I stepped away from baguette baking for quite a while, but the moment I returned, my hands remembered the folding and shaping—though not quite the way I prefer yet. Still, the loaves turned out beautiful with amazing flavor, and that’s what matters most.
Sourdough baguette with no sourness and a delicious flavor. Next time, I’ll make it with higher hydration and a slightly longer fermentation.
