Spring is in the air — you can smell it, feel it, taste it. Ramsons bursting through the forest floor, and with it, we bring something bold to the table. This dish is a tribute to Estonian long sauna tradition.
The breast is gently birch whisked, in sauna heat.
The leg, glazed in BBQ, echoes the depth of traditional smokehouse flavors.
We use from nose to tail — nothing wasted.
A French twist sings through it with vadouvan curry, 25-year balsamic, bay leaf oil, madeira-laced pâté to balance the wild with elegance. Fermented ramsons, fresh herbs, and fire.
