Latte Freddo Macchiato

It’s extremely simple: fridge-cold milk with a shot of espresso.

Paradoxically, ordering one in the United States has been one of my greatest challenges. A latte freddo macchiato is a modest 6–8 oz drink made with cold milk straight from the refrigerator and a freshly pulled shot of espresso.

You might ask, “What about an iced latte or an iced cappuccino?”

They’re not quite the same. The proportions are different, the milk texture is different, and the result is often less pleasant. Ice also numbs the flavor of the coffee and dilutes both the espresso and the milk.

In winter: cappuccino.
In summer: latte freddo macchiato.

Pan-Seared Dover Sole with Castelvetrano Olive Beurre Blanc

Ingredients
• 2 Dover sole fillets
• Salt, pepper
• Flour (light dusting)
• 2 tbsp butter + 1 tbsp oil
• 1 shallot (minced)
• ¼ cup white wine
• 1 tbsp lemon juice
• 6–8 Castelvetrano olives (finely chopped)
• 4 tbsp cold butter (cubed)

Steps
1. Fish: Season, lightly flour. Sear in butter + oil, ~2–3 min per side. Remove.
2. Sauce: Sauté shallot. Add wine + lemon, reduce by half.
3. Lower heat, whisk in cold butter piece by piece until glossy.
4. Stir in olives, season.
5. Plate fish, spoon sauce over.

Serve immediately.

Broccoooooooli pasta!
Calamarata with Broccoli Rabe, Anchovy & Calabrian Chili

Serves 4

Ingredients
• 400g calamarata
• 2 bunches broccoli rabe
• 4–6 oil-packed anchovies, 3 garlic cloves
• Calabrian chili (to taste)
• Partanna extra virgin olive oil (be generous)
• ⅓ cup pine nuts
• ½ cup Parmigiano Reggiano



Method
1. Blanch the rabe (2–3 min). Separate stems from leaves. Reserve the water.
2. Stem crema:
Blend stems with anchovies, garlic, chili, and plenty of Partanna.
Loosen with a splash of pasta water until silky.
3. Toast the pine nuts until golden.
4. Cook the pasta in the same water, just al dente.
5. Bring it together:
Warm the crema gently, add the rabe leaves and a little pasta water.
6. Mantecatura:
Toss pasta in the sauce with more pasta water and olive oil.
Off the heat, add Parmigiano—let it turn glossy and emulsified.
7. Finish:
Plate, scatter pine nuts, more Parmigiano, and a final, generous drizzle of Partanna

Pan-Seared Branzino with Yellow Pepper Chimichurri

Ingredients
• Branzino fillet (skin on)
• Partanna EVOO
• Partanna Castelvetrano olives, chopped
• 1 yellow bell pepper, roasted & diced
• 1 scallion, sliced
• Mint & parsley, chopped
• Red wine vinegar
• Salt & pepper

Yellow Pepper Chimichurri
Mix roasted yellow pepper, scallion, mint, parsley, chopped olives, a splash of red wine vinegar, and Partanna EVOO. Season with salt and pepper.

Branzino
Pat fish dry and season. Heat Partanna EVOO in a pan. Sear skin-side down until crispy (about 3–4 min), flip briefly to finish.

Serve
Spread chimichurri on the plate and place branzino on top. Garnish with a few extra olives and herbs. 🫒🐟
