This wrinkly, mould-coated lactic goat’s cheese is Tymsboro, made by the late Mary Holbrook at Sleight Farm using a natural whey starter carried forward from batch to batch, much like a sourdough culture. The moulds and yeasts you see here weren’t applied or standardised; they were part of a living microbial community shaped by the whey, the milk from Mary’s own herd, and the make room itself.

No two Tymsboros were ever the same. Some were dominated by softly wrinkled Geotrichum, others veered towards bluish-green Penicillium, and some developed freckles, bumps, and unexpected combinations of moulds that reflected subtle shifts in time, season, and place.
We miss Mary deeply: her cheeses, her conviction, and her commitment to making truly distinctive raw milk cheese that could only come from her farm.
This tightly knitted mould community is growing on the outside of a clothbound Montgomery’s Cheddar in the early stages of maturation. Microbiologist Ben Wolfe of Tufts University coined the term “coral reef” to describe these complex, interactive ecosystems of moulds, yeasts, and bacteria that form on natural cheese rinds, and here the comparison feels especially apt.

Pastel pinks, blues, and greens sit side by side, many species cohabiting and competing as they help to establish a healthy, living rind. Over the many months of ageing, this mould community will be brushed away again and again, leaving behind a canvas-like rind, lightly marked with the traces of what once grew there.

The presence of these living moulds is not just visual. Their distinctive aromas permeate the storerooms and move into the first few millimetres beneath the rind, allowing the smell and flavour of these long-established, farm-specific microbial communities to be experienced in every slice of the finished cheese.
Before the familiar bare cloth is revealed, a young Cheddar spends months wearing a living coat. Here, a whole mould garden is at work: white, wispy filaments growing from the surface, alongside darker, densely pigmented moulds forming thick patches and clusters.

We tend to think of clothbound Cheddar only in its finished form, after these moulds have grown, completed their work, and been brushed away. But early in maturation, this fantastical microbial growth is not a flaw, but a sign of good health. It tells us the conditions are just right: neither too dry nor too severe.

These naturally occurring moulds slowly break down the lard on and beneath the cloth, leaving behind a thin, resilient rind. In doing so, they help the cheese breathe, lose moisture at a gentle pace, and mature steadily over the many months to come.

Unlike most supermarket “kefirs,” which are essentially drinking yoghurts, Ki Kefir contains both bacteria and yeasts, giving it its naturally complex population of bacteria and yeasts and a fizzy dimension to its texture. It’s also unsweetened and made from the milk of a single farm. For all the festive leftover lovers out there; Cheshire and Apple Muffins is where the last bit of my Cheshire cheese is going. They sit between sweet and savoury - edging towards the savoury side. Apple lends itself happily to the acidity of this cheese. Black treacle gives the muffin its addictive salty backbone. And the boiling water makes for a moist muffin…! These are a good thing to make today, on the first full moon of 2026.

90g Cheshire cheese, grated
100g light brown sugar
180g self raising flour
1/2 tsp cinnamon
1 medium egg
220g cooking apple, from about 2 large fruit, don’t bother peeling them, just grate on a box grater, stopping when you get down to the core
50g vegetable oil
25g black treacle
25g boiling water, straight from the kettle

Oven at 190 / 170 fan. Line 7 holes on a muffin pan with muffin liners. Mix the Cheshire, sugar, flour and cinnamon in a large bowl. Grate the apple and mix with the egg. Mix the oil, treacle and water in a small saucepan, heat on medium until bubbling. Now combine the oil mix and the apple mix with the dry ingredients. Spoon the batter into the prepared tin, to make 7 muffins. Bake for 20 mins, or until a skewer inserted into the cake comes out with a new moist crumbs. These muffins are best allowed time to set, so if you can, let them sit for 10 mins or so. Enjoy warm, with butter!
