This was our 5.5 yr old first international trip and he did amazing! and I both thought this was the perfect age.
Since we had two sets of grandparents with us, we traveled a little differently than we have in the past. It worked out really well and would recommend!
We didn’t venture into the actual city of Rovaniemi but instead stayed near all the Santa Claus action. We decided to just soak up all that touristy stuff and it was great for this group.
Bonus - Ubers were readily available! This made getting around without renting a car or public transportation a breeze. All the cars had booster seats too! Everything was very kid-friendly in this part of town.
Stay! It was gorgeous and we loved it. They had a “nest” bed that Warren was so excited for as well as other multi-room set ups. A great buffet breakfast was included as well. (CONT in comments)
- 1 can pumpkin puree (~13oz)
- 1.5 cups mascarpone cheese
- 2.5 cups heavy cream
- 0.5 cups light brown sugar
- 0.5 cups granulated sugar
- 1 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1/8 tsp fresh grated nutmeg
- 1 cup espresso, cooled for dipping
- 1 package lady fingers or gluten free vanilla wafers
- 0.5 cups Dutch processed cocoa powder for dusting
1. If using fresh espresso, brew and then let cool or it’ll disintegrate the cookies.
2. Mix pumpkin puree with both sugars, ginger, cinnamon, nutmeg and salt and set aside.
3. Whip mascarpone cheese until smooth and peaks begin to form.
4. Next whip heavy cream until stiff peaks form. This means if you turn a spoon over with a dollop it won’t fall off.
5. Gently stir pumpkin mixture with heavy cream and mascarpone cheese. If there are any lumps, mix together on the lowest speed for a few seconds at a time until smooth.
6. Spread the pumpkin cream mixture into the bottom of serving dish.
7. Quickly dip cookies into espresso and then layer into serving dish. Then do another layer of pumpkin cream and espresso dipped cookies and finish with a smooth top of pumpkin puree.
8. Dust with cocoa powder and keep in fridge until ready to serve. Can make up to three days ahead of time and keep in fridge.
This will make about 8-10 servings depending on the size of your serving dish! I made individual cups but you can make in a larger dish and cut and serve pieces! Keep refrigerated and serve cool
