Black Label and Jalapeño Butter seasonings are a game changer. Black label to take out the gaminess of the meat, and Jalepeno Butter to add additional flavor.
Cooked on the Adventure Ready Single Burner, with just a few simple ingredients:
• 1 lb ground venison, form into burger patties
• Venison backstrap, cut into filets
• American cheese
• Burger buns
• Butter or oil, for cooking
Cook time: ~20 minutes
Prep the Meat:
Form your ground venison into 4 equal patties.
Pat dry your backstrap medallions.
Season both sides of everything generously using Black Label and Jalapeño Butter.
Heat the Blackstone: Set your single burner to medium-high heat. Add a light layer of butter or oil.
Cook the Burgers: Place patties on the griddle, smash slightly, and sear 3–4 minutes per side, or until cooked through. Add cheese during the last minute so it melts perfectly.
Sear the Backstrap: Sear each backstrap filet for about 2–3 minutes per side, depending on thickness. Sprinkle additional Big Horn Bison Jalapeño Butter seasoning as they cook for that buttery kick.
Toast the Buns: Lightly butter your burger buns and toast them face-down on the Blackstone until golden.
Assemble & Serve: Build your burgers with the cheesy venison patties, and serve the backstrap filets on the side (or stacked on top for the ultimate double venison burger!).

Ingredients
• 1 whole Wagyu brisket (12–15 lbs, Everglades Ranch)
• ¼ cup Dale’s Low Sodium Marinade
• Musket Powder Black Label
• Big Horn Bison Honey Habanero rub
• Big Horn Bison Salt, Pepper, Garlic rub (or 50/50 salt & pepper + garlic powder)
• 2–3 chunks oak or hickory wood
Instructions
1. Trim the Brisket
Even out the fat cap to about ¼ inch. Flip and remove the hard fat (deckle) and any excess.
2. Season It Up
Start with a light coat of Dale’s as your binder. Season the meat side first: Musket Powder → Honey Habanero → SPG. Flip and repeat on the fat side.
3. Set Up Your Cooker
Stabilize your Big Green Egg at 250°F indirect with oak or hickory wood chunks. Insert the FireBoard Pulse probe in the flat.
4. Smoke
Place brisket fat-side up. Let it roll untouched until internal hits 165–170°F (about 6–7 hours). Spritz dry edges as needed.
5. Wrap
Once bark is set and color is deep mahogany, wrap tightly in peach butcher paper. Return to the smoker and cook until probe-tender—usually around 200–205°F.
6. Rest
Let the brisket rest wrapped in a cooler or Cambro for at least 1 hour—3 to 4 is ideal.
7. Slice & Serve
Slice the flat against the grain into ¼” slices. Cube the point for burnt ends or sandwiches.
