MINI APPLE PIES
Ingredients:
- 2x apples (i used gala)
- 40g salted butter
- 50g brown sugar
- 1/4 tsp nutmeg
- 2 tsp cinnamon
- 2 tbsp lemon juice
- 3 tsp cold water
- 1/2 tsp cornflour
- 1 pack frozen pastry (comes with 2 sheets)
- 1x egg (for egg wash)
Method:
- Simmer chopped apples, salted butter, brown sugar, nutmeg, cinnamon and lemon juice in a pan until the apples get soft.
- Mix cornflour and cold water together separately.
- Pour the mixture into the pan. Mix until the saucy has thickened then let cool while you work on pastries.
- Preheat oven to 180C
- Use a glass to cut out rounds in one of the pastry sheets.
- Use the second sheet of pastry to cut out strips.
- Place 1 tbsp of the filling into the centre of each round. Be mindful.
- Lay strips of pastry on top of each round, create a lattice.
- Cut off any excess pastry on the rounds and use a fork to seal the edges.
- Brush the pastry with the whisked egg.
- Sprinkle coarse brown sugar on top because it looks cute and tastes even better 🙆🏽♀️.
- Bake at 180C for 20-25 minutes or until golden brown.
