Whenever I get my hands on fresh yuzu, a batch of yuzu shortbread is a must. Thank you for bringing these to my attention. Short. Crumbly. Deliciously buttery. These biscuits are accented with the zesty fragrance that yuzu is prized for and although icing them is optional, my yuzu shortbread almost always find themselves dressed. We especially love how the zing of the tart juice used in the icing helps balance all the sweetness.

I start by adding cubes of ice to an old fashioned glass.
Coffee is poured over the ice to cool (on this occasion, it’s drip coffee), before the glass is topped with a thick layer of foam. My cream is sweetened and flavoured with yuzu honey before it is whipped to a thick, yet pourable foam.
The finishing touch comes in the form of freshly grated yuzu zest, garnishing the white foam with its bright citrus flavour.
We’re definitely going to keep serving this one up until we’re all out of yuzus.

It’s all thanks to that cream filling.
Cream infused with jasmine tea leaves meets fresh yuzu zest rubbed into icing sugar to release its incredible aroma and flavour. Perfectly sweet but not-to-sweet.
This jasmine and yuzu cream combo was elite.. whipped until light and airy then piped into a soft and fluffy milk bun.. afternoon tea has never tasted so good.

The air sings of joyful happiness whenever fresh yuzu is in the house and I could not wait to get started. These yuzu squares came together easily using my pantry and fridge staples. Butter, sugar, eggs, flour and vanilla. The prized zest of my yuzus was finely grated to make the filling. I rubbed the zest into the sugar to release the oils which carry all the flavour and aroma (seriously, I can just eat this zest and sugar combo on its own). Tart yuzu juice and acidic lime juice went in next to bring the tang to the filling, whilst the eggs and a little flour brought the bulk to the filling and help it set.
As you can see, I also could not wait to cut into my slab. It’s best to wait until it cools completely before slicing in (so you will be able to get cleaner edges); but impatience waits for no-one.😅
Now tell me, does cutting smaller sized squares help in portion controlling what you eat? Or does this mean you will only eat more squares? 🤭

My spaghetti with wild caught prawns were punctuated with the zesty and spicy notes of my homemade yuzu kosho. There’s a background hum of garlic in this dish, and the shredded strands of zucchini brought a delicious freshness to our pasta. A final drizzle of yuzu pressed olive oil added just before serving drove home the yuzu notes of this dish. Delish.
I’ve got more yuzu kosho left here so am looking forward to some more pasta action with this Japanese condiment. A spaghetti number with pork belly, yuzo kosho cream, spinach and spring onion is on my hit list. Can’t wait.
