Seven years ago we had an idea. We bought a 1996 Ford Step Van and built our own food truck from the ground up. We decided we would know how the numbers worked after the first day of sales. We knew nothing and still, we kept going.

Now our beloved passion project, officially has a brick and mortar. I honestly don’t know how we got here. Seven years of festivals, pop-ups, interviews, events, brunches, flat tires, and check engine lights. All to serve a culinary category that our combined souls must have created in the ether long before we met on Earth. It’s a grueling profession, you HAVE to believe in what you’re doing to weather the unpredictable nature of the food business. My days start long before the sun rises, when the work at the kitchen is done, I come home and fall asleep to a whirling carousel of plates and dishes that started as raw ingredients 14 hours earlier.

I’ve been thinking a lot about the people we’ve met on the road, how we used to hand out 1,000’s of samples (and still do). The truth is each and every one of our loyal, supportive customers were earned, face to face, one by one.

Every step of the way my family, friends, and community have been there, getting it done. IT has been chaotic, terrifying, and one of the most fulfilling things I’ve embarked upon.

To my community, forgive me for lacking in the communication department, I’m doing my best. So many faces new, and old. I am starting to forget names and where I met folks but it’s all because I’m pouring my entire being into making sure that all of the love and energy I have is going into the dishes we serve and the team we are building and the family we are raising.

So thankful for where this journey has taken us. I hope to find balance someday in the near future but until then I’m going to focus on being relentless.

Also, I love you every confounding thing we do together lights a fire in all the remaining youthful cells I have in my body. Of all the thoughts tossed around in my head. “What is life?” Is not a question I ever have to ask.

The 10 year old iteration of me just reached out and gave me a big hug. My academic journey has always been a side quest to a boots on the ground approach to conservation work. As time marched on and progress was made I started to ease off of my childhood aspiration of contributing a novel observation to the sci community.

Just being in the reserve while showing visitors untouched ecosystems can be incredibly gratifying and I am always grateful for that opportunity.

With that being said, the rainforest can provide you with gifts, none of which you can possibly plan to receive. On this day while walking a small tributary of The Las Piedras River, the forest presented a few incredibly cryptic creatures to our group.

We were able to observe fishing behavior amongst a group of Bush Dog (Speothos venaticus) pups and their Mother. In 15 years, this was the first time I had ever seen them in-situ. Bush dogs are strange creatures whose closest living relatives are Maned Wolves and African Wild Dogs.

I almost didn’t go on this excursion, I almost didn’t bring my camera. I almost missed an opportunity to accomplish a goal that was slowly evaporating from a nearly lost corridor of my brain. The place that holds the boundless curiosity and optimism of a child who loved the natural world.

The other day my son saw a hawk sitting on a telephone line and asked me: “Daddy WHEN is that bird going to go extinct?”

I fear for kids growing up in our modern times, many of which never get to experience the natural world with the kind of hope that is untainted by themes such as habitat loss, extinction, and the incessant development of green spaces into depauperate impermeable heat sinks full of non native “landscaping”.

There are still so many observations to be had, species to discover, and hope to sew for future generations. That is why I will continue on this path while remembering where it all started.

This is a simple natural history observation, but I get to share it with the special people who made it possible.

Taking a four year old into the jungle is not for the faint of heart. Since the day he was born, I’ve worked hard to earn my son’s trust. He got to spend meaningful time with a band of crazy uncles. He got to be loved on by my one of a kind Peruvian family. He got to bask in the glory of the jungle and I’m just so proud to be Selva’s Daddy. Thank you Uncle for this forever memory.
