⭐️⭐️⭐️⭐️⭐️ Pure Heaven: chocolatey, caramel-y, slightly smoky, not bitter at all. Everything you could possibly want in a hojicha.
⭐️⭐️⭐️⭐️⭐️ My New Daily Go-To: I’ve become very sensitive to caffeine the past few years and have really missed my #dailymatcha. This [hojicha] is my new daily obsession! I love having an iced treat during the day without the jitters. So creamy and delicious. Just restocked!:)
We’ll be featuring it at June 27th. Come on by!

I’m making a quick brown sugar syrup by stirring equal parts brown sugar and hot water until the sugar dissolves.
To make the matcha, I soften the whisk by soaking it in a bit of hot water. Don’t let the water go above the black string.
Measure out ¼ cup of water that’s 176 degrees Fahrenheit. If you’re boiling water on the stovetop, bring the water to a boil, take it off the heat and let it sit for 4 minutes to cool down.
I’m using my special edition matcha, which is an Oh, How Civilized and Mizuba collaboration. It’s available right now and once it sells out, it’s gone so get it while you can!
My formula for making iced matcha lattes is ¼ cup of water to 1 teaspoon of matcha. If you use a matcha ladle, go with 2 scoops.
I always make a matcha paste to make it easier to whisk. Add a tablespoon of hot water from the ¼ cup to the matcha and mix to create the paste. Add the rest of the hot water and start whisking, moving the whisk in a “W” shape. You want to get as many tiny, uniform bubbles as possible to create the best foam.
To assemble the drink, put the brown sugar syrup into a cup, add milk, then ice. Top with matcha. Stir it and it’s ready to drink. You need to make this today! It’s perfectly sweet, creamy, and balanced.
Iced Matcha Latte with Brown Sugar Syrup
1 tablespoon brown sugar
1 tablespoon hot water
1 teaspoon of matcha
1/4 cup hot water (176°F)
¾ cup milk (any kind)
1 cup ice
Stir brown sugar and 1 tablespoon of hot water until sugar dissolves. Set aside.
Sift matcha into a bowl and add a tablespoon of hot water. Mix to create a matcha paste. Add the rest of the hot water and whisk in a “W” shape to create foam.
To assemble the drink, put brown sugar syrup and milk into a cup. Add ice. Pour in the whisked matcha. Stir before drinking.

This is an Iced Matchado, or a Matcha Cortado. Cortado is a drink that’s equal parts espresso and milk and to make a matchado, I’m using equal parts matcha and milk.
The matcha I’m using is a special edition Oh, How Civilized and Mizuba Tea Co. collaboration. It’s available right now and once it sells out, it’s gone so get it while you can!
The matcha is nutty, not too grassy, and a little sweet. I love it and I think you will too.
Start by prepping the whisk by soaking it in hot water for a few seconds. Sift the matcha to get rid of any clumps. I like to make a matcha paste to make it easier to whisk so I add just a tiny bit of hot water to the matcha. Use the whisk to move the matcha around to create a paste with the hot water. Then add the rest of the hot water. Move the whisk in a “W”. You want to aerate the matcha to create fluffy foam on top. The goal is to get the foam layer without any visible bubbles.
Matcha always tastes better with something a little sweet, I sweeten the milk with sweetened condensed milk. Put ice and sweetened milk into a small cup and add the matcha. Stir before drinking.
Iced Matchado
1 teaspoon of matcha
1/4 cup of hot water (176°F)
2 teaspoons sweetened condensed milk
1/4 cup of milk
2-3 Ice cubes
Sift matcha into a bowl and add a splash of hot water. Mix together to form a matcha paste. Add the rest of the hot water and whisk in a “W” shape.
Stir together sweetened condensed milk and milk.
Assemble the drink by putting ice and sweetened milk into a small cup. Add the whisked matcha, making sure to get as much of the foam into the drink. Stir before drinking.

If you’ve noticed your favorite matcha tins are limited or seen prices rise, you’re not alone.
The global matcha shortage of 2025 is real, but the story behind it is more nuanced and complex than the headlines suggest.
It’s important to zoom out of the panic and take a look at all aspects of what’s happening on the ground in Japan.
Our Mizuba team just returned from our regular trip visiting our farms, and we wanted to share a bit of what our conversations were like with our tea farms and producers. In this video, we chat about:
🍃 Why are limits in place?
🇯🇵 How is it impacting tea farmers and producers?
💚 What are the pros and cons?
We’re grateful to be part of the conversation and to support the makers at the heart of it. We’re humbly just one datapoint in a large conversation, but we do hope this helps provide a bit of context to this historic moment in time for Japanese tea.
(And before anyone worries — yes, Mizuba Tea does still, and will have matcha)
