櫨の谷窯さんの裏で自生しているワイルドな三つ葉を摘ませて頂きました。香りも水耕栽培とは違い力強く別物！
お魚は鰤の漬け。この時期の鰤は脂が少なくすっきりしていて身が引き締まり美味。
唐津に来なければ発見できなかったでしょう。
赤玉ねぎのスライスときゅうりの塩揉み。
今回おさかな村で買った赤玉ねぎも当たりで水にさらす事も塩で揉む事なくても辛味や臭みなどなくりんごのような糖度！
余計な味付けをしなくても食材が美味しいのって最高に幸せ。いいところに住んでるなぁと感じます。

5月は出張続きで、なかなか自宅でゆっくりとはいきませんでしたがやっとひと段落。
朝はやはりお味噌汁を飲まないと調子が出ません。
今朝は七山の道の駅『鳴神の庄』で見つけた大きなさやいんげんが主役。細く刻んでサッと塩茹でしてお味噌汁にふわっと。
シャキッとした食感と香りが初夏の雰囲気を漂わせてくれました。
鯖は冷凍庫から発掘した〆鯖。
忘れていた訳ではないけれど食べるタイミングを逃してしまって。〆鯖を久々に焼いて食べたらなんとも美味しい！自家製のガリを添えて。
日々のちょっとした美味しい発見が楽しい。
残りのさやいんげんは玉子とじかなぁ…
そして〆鯖もまだ冷凍庫に半身ある。

次来た時に買ってみようと思ってたら買えず仕舞い。
今年は念願叶い運良く買えたので『白魚の玉子とじ』に。
一番出汁に赤酒、薄口と濃口。たまごで綴じると味が薄まるのでややしっかり目に味付け。
たまごも奮発して さんの平飼いのものを。
久々に炊く白ごはんの蒸らし時間に合わせて玉子とじを仕上げる。仕上げにぱらりと中里家から頂いた花山椒をあしらって。
蕨は先日お友達と早起きして採りに行ったもの。
お漬けものは さんのワークショップで年末に作った縄文漬けがこれまた美味。
身体が喜ぶ食卓。旬のものを味わえるありがたさ。
これ以上の贅沢はありません。

寒くて最後の方は震えながら。
ひとさじのライブで作ったチキンビリヤニ、フライドオニオン、鰯のスパイスアヒージョ、試作のダルカレー。
スリランカに行ってからスパイスのお料理が多くなりました。
効能などもひとつずつ調べるのも楽しい！

『こちらに唐揚げ乗せていんでしょうか？』なんて言いながらみんなで和気藹々と頂きました。
食後には さんが丁寧に点てて下さった美味しいお抹茶。
窯の見学の後は絵付けまで体験させて頂き感無量！

インスタライブでも少し説明させて頂きましたが『ひとさじ』はお料理を主軸としたオンラインサロンで、月2回のお料理ライブと私達が日々の暮らしの中で楽しんでいる事、趣味などをシェアさせて頂き、またメンバー様方にも相互的に写真や文章で綴って頂けるコミュニティサロンです。
料理教室では遠方の方、海外の方、子育て、お仕事など様々な環境の下、行きたくても行けないから是非オンラインでのお教室を！と言う有難いお言葉を頂戴する事が多かったのですが、私はとても機械オンチでやってみたくてもやり方も分からない状況でしたが、今回念願のオンラインサロンを開設出来る事になりとてもわくわくしています。
同じ趣味を持つ人が集まり価値観を共有出来るサロンです。私自身性格的に「こうでなければいけない！こうしなければならない！」という決めつけは好きではありません。ですので『ひとさじ』のメンバー様には自由にのんびりと楽しく過ごして頂ける憩いの場としてご活用頂けましたら幸いです。
