✨Miso Pecan Buns✨

To celebrate the launch of the new Everything Miso Sauce, the kind team at have sent me some to try.

I’ve used it to make these browned butter miso pecan buns, with an Everything Miso Sauce glaze.

📖 Here’s the recipe:
Bread:
260g strong bread flour
13g caster sugar
1/2 tsp salt
4g dried yeast
125g whole milk
60g egg
60g butter
-
(Optional) Caramel:
50g sugar
-
Filling:
120g butter, browned and cooled
30g Everything Miso Sauce
50g light brown sugar
125g toasted pecans (reserve some for topping)

Glaze:
30g brown sugar
10g Everything Miso Sauce
30g water

Line 9 inch pan
1. Make dry caramel in a pan and pour onto a sheet of grease proof paper. Once cooled, break up into little shards & place at the bottom of your pan.
2. Make the dough, check for gluten development & proof.
3. Filling: Mix the cooled brown butter, miso sauce & brown sugar together.
4. Roll the dough out roughly 30x40cm.
5. Spread the filling, sprinkle with the toasted pecans.
6. Roll the dough and cut into 6 rolls.
7. Place into prepared tin and proof.
8. Bake at 190c fan for 24-30 mins.
9. Make the glaze: heat all ingredients in saucepan until bubbling, then set aside.
10. Brush the baked buns with the glaze & scatter over the reserved pecans.

Cooked too much rice again? We’ve got just the thing for you👇

Turn it into this crispy rice and chicken salad with a zingy Miso dressing we’d put on just about anything! This is a great one to batch make for lunch, just add the Miso dressing when you’re ready to serve to keep everything nice and crunchy

Ingredients

Salad Dressing:
3 tbsp soy sauce
1 tsp sesame oil
10g pickled ginger juice
1 tbsp honey
1 tsp sesame oil
10g sesame seeds, toasted
20g Miso Tasty White Miso Paste

Crispy Rice:
250g pre-cooked rice/ day-old rice
2 tbsp soy sauce

Salad Ingredients:
2 breaded chicken breasts
150g edamame beans
1/2 cucumber
1 spring onion
40g pickled ginger
1 avocado
sprinkle of sesame seeds, toasted

Method
1. Preheat the oven to 220°C. Toss the rice with the soy sauce, then spread it out evenly on a baking tray. Bake for 15 minutes, stirring halfway through. For extra crispy rice, use pre-cooked or day-old rice and ensure it’s as dry as possible.
2. Meanwhile, prepare the dressing by combining all the ingredients in a bowl and whisking until smooth and fully combined.Once the rice is done, remove it from the oven and lower the temperature to 180°C. Add the chicken to the oven and cook for 15 minutes, or until fully cooked through.
3. While the chicken cooks, prepare the salad ingredients. Chop the cucumber and avocado and finely slice the spring onions.
4. Add those ingredients to a large bowl along with the pickled ginger, edamame beans, cooked chicken, and crispy rice.
5. Pour over the dressing and toss everything together until well combined.
6. Finish by sprinkling over toasted sesame seeds, then serve and enjoy!

We’re keeping cool with this refreshing Miso iced coffee. It’s sweet, creamy and ever so slightly umami – the best way to start the sunny weekend ahead ☀️

Ingredients:
1 double espresso
4g demerara sugar
9g Miso Tasty White Miso Paste
25g condensed milk
100ml milk of your choice
handful of ice

Method:
1. Brew a double espresso. While still hot, add the sugar, condensed milk and white miso. Blend or whisk until completely smooth and the miso paste has fully dissolved.
2. Fill a glass with ice, then pour over the miso coffee mixture.
3. Top with your milk of choice, give it a gentle stir and enjoy!
There is a hidden ingredient inside these No Bake Miso Snickers Bars that you probably wouldn't expect to see.. It's WHITE MISO PASTE by. Its umami flavour and ability to enhance other ingredients makes this the perfect addition to this recipe and many other sweets. Here is how to make these delicious No Bake Miso Snickers Bars.

BASE
- 200-250g (10-14) pitted medjool dates
- 250g (1½ cups) raw almonds

CARAMEL
- 20g (1 tbsp) Miso Tasty White Miso Paste (add more slowly if you prefer a stronger flavour).
- 400g (around 20) medjool dates
- 140g (½ cup) peanut butter
- 80g (¼ cup) rice malt syrup or maple syrup
- Pinch of salt

PEANUTS:
- 150g (1 cup) natural/roasted peanuts

TOP:
- 200g chocolate
- 10g (2 tsp) coconut oil

Method:
- Grease and line a 20cm x 20cm baking tray.
- Pit all of the dates. Place 400g of dates for the caramel into a deep bowl, cover with boiling water and let it sit for 15 minutes or until the dates are soft.
- Add the almonds into a food processor, along with 10 dates and continue to add more if the mixture is too dry. Blend until the mixture starts to combine together.
- Press the mixture evenly into the lined baking tray.
- Once the dates for the caramel are soft, drain add them to the food processor.
- Add the other caramel ingredients, including the White Miso Paste and blend in a food processor until smooth.
- Adjust the taste of the caramel with more white miso paste and flaky salt.
- Spread the caramel evenly onto the base mixture.
- Add the peanuts to the top of the caramel. Lightly push them in.
- Melt the chocolate and coconut oil. Mix until smooth.
- Pour the chocolate evenly onto the peanut layer and place in the fridge for an hour until set.
- Remove from the tray and cut into bars.
- Freeze for 2-3 months or 1 week in a sealed container in the fridge. Grab and enjoy.

MISO SALMON & SOBA NOODLE SALAD 🐟

Miso Dressing:
2 x tbsp light soy
2 x tbsp balsamic vinegar
2 x tbsp white wine vinegar
1 x tbsp White Miso Paste
1 x tbsp brown sugar
2-3 cloves Garlic
1 x tbsp sesame oil
1 tsp each Black & White Sesame Seeds

Salad:
2 x Fillets Wild Caught NZ Salmon
1 x Bunch Broccolini, Chopped
1 x Handful Snowpeas, Chopped
1 x Bunch Soba Noodles
1 x tbsp Bone Broth (stock will do)
1 x Lime
1/2 Bunch Coriander, Chopped
2 x Cloves Garlic

- Combine all dressing ingredients in a airtight jar, shake to combine, set aside
- Chop garlic snow peas, broccolini & fry off until fragrant
- Add bone broth or stock, juice of 1/2 lime
- Boil Soba Noodles for 2 minutes, strain and rinse with cold water
- Sear Salmon in hot pan for approx 1.5 mins per side
- Combine soba, greens, miso dressing & season with lime juice, chopped coriander
- Serve with salmon on the side or flaked throughout

ENJOY
Miso Garlic Butter Focaccia using
White Miso Paste

-Ingredients-

Miso Garlic Butter Topping

70g butter, unsalted, softened
1 tbsp Miso Tasty White Miso Paste
2-3 garlic cloves, finely grated
1 tbsp honey
1-2 tbsp extra virgin olive oil
Sea salt, flakes
Optional: spring onion, any herbs
Dough

300g bread flour (or plain/all-purpose)
3.5g instant yeast
4.5g salt
280ml warm water, 40-45°C
-Method-

Put the flour, yeast and salt into a bowl and mix.
Make a well in the centre, pour in the warm water and mix until no dry flour remains
No need to knead, you can relax.
Cover and place in a warm spot for about 1-2 hours until doubled - if you got the time.
Over medium low heat, add softened butter to a pot and let it melt.
Add garlic and cook until fragrant
Strain the butter and garlic and add Miso Tasty White Miso Paste into the butter.
You can save the garlic for another dish or eat it on its own (i wont judge)
Set aside while you wait for the focaccia.
If it solidifies you can microwave it, only need’s 10-20 seconds - so its back to liquid form.
Line a baking pan with baking paper.
Drizzle some olive oil.
Pour the risen dough into the pan.
Gentle push the dough into all corners.
Cover and leave it to rise again for 45 minutes.
Preheat the oven to 220°C.
Drizzle more olive oil on the dough.
Oil your fingertips and lightly dimple the dough.
Add flakey sea salt and any herbs of your choice.
Bake for 28 minutes until golden brown, rotate at 15 minutes for even coverage.
Place on a wire rack and immediately baste with miso garlic butter.
