食の現場は（今回はフードスタイリング）、肉体労働でもあるけど
みなさんとのチームワークは本当に楽しい。

#万能玉ねぎマリネ
またの名を、#おかず玉ねぎ
スライスした玉ねぎに
調味料をからめて漬けただけ。
べっ甲色になった玉ねぎは
美濃有機玄米酢の効果で
まろやかな酸味と深みのある味わい。
そのまま副菜にしてももちろん
豆腐や鶏ハムにのせたり
ドレッシングのように野菜にかけたり
実はごはんにのせるとおいしい。
・玉ねぎの辛みが苦手な人はスライスしてから平らに広げてしばらく置いておくと辛みが抜ける。
・新玉ねぎで作ると、とろりと柔らかい仕上がりに。
・オイルを加えることで玉ねぎの辛みがやわらぐ。
・漬けてすぐに食べられるが、冷蔵庫でひと晩置くと味がなじんでよりいっそうおいしくなる。
・冷蔵庫で７～10日保存可能

の想い出といえば、作り手と場や人をつなげる、
ひとり問屋の日野明子さん と、楽しく岐阜を巡ったこと。
中津川付知の木工イベントで、いつも愛用している蒸篭の作り手さんに会えたり、東白川では「つちのこ」と対面！
山菜こしあぶら、を入手できたので、どうしても調理、食べたい気持ちが抑えられず急遽、神渕の家にお越しいただいた。
木工作家の、川合優さんも 参加いただき三人でごはんとお茶時間。
私からしたら、スター達が神渕に来てくださった嬉しいサプライズな時間となりました。
日野さんが、見送る私を撮影してくれ、
いつも手をふり見送ってくれてた祖母を思い出しました。

銀座の銀座たくみで開催中の「鍛冶工房弘光展」にて、フライパン「鍛月」を使い、焼きたてタコスを振る舞いました。
鍛冶工房弘光さんの魅力を、実際に料理を通してお伝えできたこと。ありがたく、楽しい一日でした。（イベント報告にしては長い文章です。）
鍛冶工房弘光は、江戸時代から続く鍛冶工房。燭台や、近年はフライパンも作っています。かつては、どの町にも鍛冶屋があり、人々の暮らしを支えていました。農具や包丁など、鍛冶屋がいなければ生活が成り立たなかった時代があったのです。
私が活動の場としている岐阜県七宗町神渕にも、昔は鍛冶屋があったことを、先日父が教えてくれました。
遠い昔話のようにも感じるけれど、そうした仕事が今もなお続いていることに、凄いことだと思います。
以前工房を訪れた際、炎の上がる中で、熱した鉄を冷まし、叩き、また熱する。その繰り返しで「鉄」が「道具」へと変わっていく工程を見ました。
そうして生まれたフライパンは、やはり格好良く、そして使いやすい。
今回、一日接客をして感じたのは、鉄のフライパンに憧れはあっても、「扱いが難しそう」と、一歩引いてる方が多いことでした。
私は上京前、父がホームセンターで買ってくれた中華鍋を、今でも使い続けています。それくらい鉄は丈夫で、きちんと使えば一生ものにもなる。何より、料理を美味しくしてくれる道具だと思います。
そんな思いもあり、今回はタコスを通して、鉄のフライパンの魅力をお伝えしました。
会場となった銀座たくみは、1933年創業の民藝店。上京した頃、銀座へ展覧会を見に行っては、手仕事に憧れてよく立ち寄っていました。
当時の自分が、まさかこちらで料理をすると知ったらたまげてたと思います。
個展は5月21日までですが、その後も銀座たくみさんでは作品のお取り扱いや民藝のものが色々ありますし、鍛冶工房弘光の小藤さんも各地で展示をされています。
長く続いてきた鉄の仕事を知り、鉄の道具を日常に取り入れることで、暮らしの楽しい相棒は増えるかもしれませんよ。

今回は、工程を少なくして、皆さんに少しゆったり楽しんでいただけたら……と思っていたはずが、気づけばいつものように盛りだくさんに。結局、たくさん助けていただきながらの会となりました。
料理の体験に来てくださったのか、爆笑しに来てくださったのか、途中わからなくなるほど賑やかな時間でしたが、それぞれに想いを持って足を運んでくださっていたことを感じました。
皆さんで漬物を仕込み、今回は愛知の地魚も使いながら料理を。手を動かしながら、初対面の皆さん同士で笑顔の輪ができて良い時間でした。
祖母との体験からつながるテーマだったので、また同じ内容やアレンジして開催できたらと思いました。
