Day 6 of our 10 Day Culinary Immersion was pure magic.
We spent the day learning from the incredible Chef Rosalía Chay in Yaxunah, discovering the ancestral techniques behind one of Yucatán’s most iconic dishes: cochinita pibil.
Slow-cooked underground in the traditional pib, wrapped with history, fire, recado, and so much soul… this cochinita was unforgettable. And of course, we had to turn it into the perfect taco — handmade tortilla, juicy cochinita, pickled onions, salsa, and that beautiful Maya flavor in every bite.
This is what our 10 Day Culinary Immersion is all about: learning Mexican cuisine from the source, cooking with masters, and experiencing the culture one unforgettable meal at a time.
