No voice today, but this mole de olla says everything.
Slow, comforting, and exactly what I needed, one of those bowls that just warms you up properly. Made a big batch, had a massive bowl with lime, and honestly it fixed my mood a little. If you’re feeling off, this is the one.
Mole de Olla
Serves 4
Ingredients
800 g beef ribs
1/2 onion
3 garlic cloves
2 medium tomatoes
1–1.5 tsp salt (adjust to taste)
1.5–2 L water
4 dried guajillo chiles (stems and seeds removed)
1–2 sprigs dried epazote
4 carrots, peeled and cut
8 baby potatoes, cut
2 corn cobs, cut into chunks
150 g green beans, trimmed
1 courgette, cut small
Method
Add beef ribs to a large pot with onion, garlic, tomatoes, salt and water. Bring to a boil, then simmer for about 1–1.5 hours, until the meat is very tender and the broth is flavourful.
Meanwhile, soak the guajillo chiles in hot water for about 10 minutes until soft.
Remove the cooked onion, garlic and tomatoes from the pot. Blend them with the softened chiles and a cup of the broth until smooth. Strain the sauce back into the pot.
Bring to a simmer and add carrots, baby potatoes and corn. Cook for about 10–15 minutes.
Add green beans and calabacitas, and continue cooking until all the vegetables are tender but still holding their shape.
Add the dried epazote and simmer for another 5 minutes. Taste and adjust salt if needed.
Serve hot with a generous squeeze of lime… simple, cozy, and so so good.

Baja fish tacos kind of day. The weather was too good not to treat myself and el marido.
The secret to delicious, extra crunchy fish tacos is always in the batter, my dad made sure I learned that well ♥️.
Then comes the fun part: piling on all the toppings. And of course, a little drizzle of my homemade salsa macha (made fresh yesterday) takes everything to another level. Don’t forget to order a jar!!
