Für die Baisermasse:
4 Eiweiße
1 Prise Salz 150g Zucker
Zuerst nehmt ihr eine Springform (28 cm) und fettet diese ein. Danach schlagt ihr für den Rührteig die weiche Butter, Zucker und die Eier schaumig. Danach gebt ihr die restlichen Zutaten, also Salz, Mehl, Backpulver und Vanilleextrakt hinzu und verrührt alles zu einem glatten Teig. Diesen verteilt ihr habe dann in der Springform gleichmäßig.
Den Rhabarber schält ihr und schneidet diesen in kleine Stücke. In einer Schüssel mit Stärke und Zimt vermengt ihr anschließend den Rhabarber und verteilt diesen auf dem Teig. Dann backt ihr den Kuchen bei 180 Grad (Ober- Unterhitze) für etwa 30 Minuten backen. Der Teig sollte durchgebacken sein, am besten mit Stäbchenprobe prüfen.
Während der Kuchen im Ofen ist, könnt ihr die Baisermasse zubereiten. Dafür schlagt ihr die Eiweiße mit einer Prise Salz steif und lasst den Zucker langsam einrieseln, bis eine feste, glänzende Masse entstanden ist. Die Baiser Masse gebt ihr dann nach dem Vorbacken auf den Kuchen und backt diesen noch einmal für 5-10 Minuten, bis das Baiser goldbraun ist.
