PUMPKIN SQUARES
prep time: 5min
bake: 20-25 min
cooling for icing: 20-30 min
This was my Grandma’s recipe & is an absolute crowd pleaser everywhere I take them. So light & fluffy, not too sweet, & the most delightful bite. Every year I get asked for the recipe, so save this one for later!

INGREDIENTS + STEPS
Mix together
4 eggs, beaten
1 tsp cinnamon
1 cup veg. oil (I’ve used avocado oil lately)
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 cups sugar
2 cups pumpkin
2 cups flour
*Pour into greased 12x18 cookie sheet, spread evenly*
Bake 350 for 20-25min (err on the conservative side for your first go. Remove from oven once toothpick comes out dry)

ICING
Mix together
3oz cream cheese
1 tsp vanilla
1/2 cup butter (softened)
1 tbsp milk
3 cups pow. sugar
*The longer & faster you mix, the fluffier your frosting becomes* Spread over warm (not hot, not cold) pumpkin squares & enjoy!
*If you wait too long & cake becomes room temp, make sure your frosting is light & fluffy so it doesn’t rip the top layer off*
