Bavette de bœuf marinée (air fryer)
Donne 4 bavettes
Marinage: 30 min à 4 h
Préparation: 15 min
Cuisson: 10 min (ou selon votre cuisson préférée)
Repos: 5 min
Ingrédients
• 15 ml (1 c. à soupe) d’huile d’olive
• ½ échalote française, finement hachée
• 1 gousse d’ail, hachée
• 30 ml (2 c. à soupe) de sauce Worcestershire
• 10 ml (2 c. à thé) de vinaigre balsamique
• 10 ml (2 c. à thé) d’épices à steak
• 4 bavettes de bœuf
Préparation
Mélanger tous les ingrédients (sauf la viande) dans une assiette creuse. Ajouter les bavettes et bien les enrober. Couvrir et laisser mariner au réfrigérateur de 30 minutes à 4 heures.
Cuire à la friteuse à air à 200 °C (400 °F) pendant environ 10 minutes, selon la cuisson désirée. Laisser reposer 5 minutes avant de servir.

Polpette aux champignons et aux bocconcinis, gremolata aux herbes
Donne: 12 portions (12 polpettes)
Préparation: 45 minutes
Cuisson: 26 minutes
Ingrédients – polpettes
• 1 barquette de 250 g de champignons tranchés
• 2 échalotes françaises, tranchées
• 450 g (1 lb) de porc haché
• 250 ml (1 tasse) de chapelure assaisonnée à l’italienne
• 125 ml (½ tasse) de parmesan, râpé je n’en avais pas 🤣
• 80 ml (⅓ tasse) de lait
• 4 gousses d’ail, hachées
• 15 ml (1 c. à soupe) d’herbes séchées à l’italienne
• 12 bocconcinis cocktail ou mini (environ 200 g)
Ingrédients – gremolata aux herbes
• 125 ml (½ tasse) de persil frais, haché
• 125 ml (½ tasse) de basilic frais, haché
• 80 ml (⅓ tasse) d’huile d’olive
• 1 gousse d’ail, hachée
• Le zeste de 1 citron
Préparation
1. Retirer la grille de la friteuse à air. Si elle n’est pas amovible, la couvrir de papier parchemin.
2. Déposer les champignons et les échalotes dans le panier. Vaporiser d’huile, saler et poivrer. Cuire à 200 °C (400 °F) à la fonction Air fry pendant 12 minutes.
3. Transférer sur une planche, laisser tempérer puis hacher grossièrement.
4. Dans un bol, mélanger le porc haché, la chapelure, le parmesan, le lait, l’ail, les herbes séchées et les champignons hachés. Saler et poivrer généreusement.
5. Façonner 12 polpettes en insérant un bocconcini au centre de chacune.
6. Déposer dans le panier de la friteuse en une seule couche (ou cuire en deux temps). Cuire à 150 °C (300 °F) à la fonction Air fry pendant 14 minutes, en les retournant à mi-cuisson.
7. Mélanger tous les ingrédients de la gremolata dans un bol.
8. Servir les polpettes et garnir de gremolata. Accompagner de pâtes ou de risotto.
