200g spaghetti
100g guanciale (or pancetta if you can’t find guanciale)
1/2 cup Pecorino Romano
1-2 tbsps freshly cracked/ground black pepper
Crushed tomatoes
1-2 tbsps Calabrian chilies or chili flakes
Salt
Instructions:
Place your pasta in boiling & salted water.
Render your guanciale until crispy, leaving some of the rendered fat in the pan. Remove the guanciale for serving.
Grate your Pecorino Romano very fine and grind your black pepper.
Add your crushed tomatoes and chilies to the pot and let simmer.
When your pasta is al dente, remove it from the water and place in your pan.
Add some guanciale and Pecorino Romano before finishing and serving.
Serve with more cheese, pepper and some of that extra guanciale.

Grate your pecorino romano very fine and grind your black pepper.
In a bowl, combine the yolks, Pecorino Romano, black pepper and some guanciale fat to make a thick paste. Thin it out slightly with a ladle of pasta water.
When your pasta is al dente, remove it from the water and place in your pan.
Incorporate your egg mixture into the pan with more pasta water - stirring vigorously.
Continue adding cheese and pasta water until you’ve reached a creamy sauce.
Add some guanciale before finishing and serving.
Serve with more cheese and pepper and some of that extra guanciale.

Ingredients:
6 Conestoga Farms’ eggs
1.5 lbs. sausage, removed from casing
1 cup flour
2 Conestoga Farms’ eggs for breading
Panko breadcrumbs
Salt to season
Instructions:
1. Bring a pot of water to a boil and boil your eggs for 5 minutes.
2. Place the eggs in an ice bath to stop cooking, making them easy to peel.
3. Peel your eggs and set them aside.
4. Flatten out your sausage, and place a boiled egg inside, wrapping it into a ball, and squeezing it firmly to pack it tight. Repeat for all your boiled eggs.
5. Bread the scotch eggs in flour, then eggs, then panko breadcrumbs.
6. Heat your oil to 350° and deep-fry your scotch eggs in batches until they are golden brown. When the internal temperature reads 145° on the temperature probe, that’s when you’ll know they are done.
7. Let cool for 5-10 minutes and enjoy!
