国産の高山茶筌に一本ずつ糸を掛けていく🪡
簡単そうに見えて、これがとっても繊細。
細かな作業なので、思っていた以上に集中力が必要でした🍃
子どもが小さい今、こうして細かい作業に没頭できる時間は本当に貴重。
無心で手元を見ながら作業するのは、何年ぶりだろう。
とてもいいリフレッシュになりました🌿🍃🍃
そして、実際に茶筌に触れてみて、
改めて職人さんの技術のすごさを実感。
高山茶筌は、淡竹（はちく）を使って作られ、
しなやかな穂が抹茶をクリーミーに泡立てるのだそう。🍵
特に難しかったのが、最後の仕上げ。
穂の一本一本が細く、折れそうで、
力加減も本当に難しい。
うまくカールしないし、幅もなかなか揃わない。
最後は翠華園の職人、谷村弥三郎さんに
仕上げていただきましたが、
手際も仕上がりも、もちろん全然違う。
自分でやってみたあとだからこそ、
職人さんの手捌きがより鮮明に見えて、
思わず見入ってしまいました。🍃🍃🍃🍃
これだけの技術が必要なら、この価格になるよね
と、実際に手を動かしてみて初めて納得。
美しく仕上げていただいた茶筌は、
なんだか使うのがもったいなくて。
しばらくは観賞用になりそうです🌿

オーブンを使わない
「濃厚抹茶レアチーズケーキ」
12cmの丸型がなかったので、
今回は17.5×6×6cmの 角型を使用。
抹茶は、丸久小山園の「又玄」🍃
抹茶の層は甘さ控えめで、
抹茶のビターな味わいをしっかり感じる仕上がり。
そこに白いクリームチーズの層の甘みが合わさって、
ちょうどよいバランスに🧀
加熱しないレシピなので、
使う抹茶の特徴もしっかり出るのが良い🌿🍃🍃
サッパリ感にコクが欲しくて
今回は濃茶ソースを添えて🌿
抹茶 小さじ1
きび砂糖 小さじ1
お湯 50ml
これを練るだけ。
コクが加わって、また違った味わい🌿
ちなみに、この角型で分量通りに作ると、
抹茶の層でいっぱいになるので、
少し別のカップに取り分けて、型は7割ほどに留めると
白い層とのバランスもきれいに仕上がります🥣

普段、スタバの抹茶フラペチーノはあまり飲まないのですが、
ティバーナのこれは飲みたくなる🍃
和三盆糖のやさしい甘さが、
抹茶のドリンクとよく合う🌿🍃🍃🍃
甘さがしっかりあるのに、
抹茶のほろ苦さがかき消されないのがいい🍃
ミルクもすっきりとしていて、
スターバックスの抹茶クリームフラペチーノと比べると
口にこってり残らないのも好みです🌿
マイタンブラーに入れてもらうと、
キンキンに冷たいまま楽しめて好き🍃🍃
子どもがぐずっても、そのまま持ち運べる。
今の私のライフスタイルにフィットしていました🥤

何度も食べている抹茶シフォンケーキ、早朝だった今回はプルプル揺れるほど過去一生地がしっとりでした🍰抹茶ソースもねっとり、作りたてはこんなに違うのかと！

奈良のかき氷屋Labo103のイートイン🍧🌿
今回の催事限定、
黒糖くるみと抹茶のかき氷を。
目の前で丸く綺麗に盛られた真っ白な氷。
金粉が散りばめられ、抹茶の色が重なっていく姿は、
まるい芸術作品のよう。🧊
ふわふわで、口の中ですっと消えていくような、泡のような食感。
これまで食べた抹茶エスプーマの中でも1番軽い感覚でした。
抹茶蜜も甘さはほどよく、心地よい味わい。
ただ、半分から下は黒糖蜜なので、
抹茶の要素は全体の5割ほど。
そういう意味では抹茶の要素は少なめですが、
一番上のエスプーマを味わえただけでも満足できる一杯でした。
そして一番印象に残ったのが、黒糖くるみ。
香ばしい風味と程よい甘じょっぱさ、食感がとても良いアクセントに。
中央には西京白味噌ホイップの塩気も忍ばせてあり、
別添えの塩昆布とあんこも合わせながら、最後まで美味しくいただけました🌿
予約はすでにいっぱいとのことですが、
オープンすぐに当日枠で伺うと入ることができました。

気づけば、あっという間に着られるサイズになっていました。
秋冬が来る前にサイズアウトしないかな、と
少しドキドキしながら過ごしています。🍃

どちらかを諦めるのではなく、

夜な夜なベイキングは、やっぱり楽しい🌿
今回は、抹茶のケーキに
厚みのある真っ白な生クリームを
一枚の層のようにたっぷりと。
クリームにはサワークリームを少し
砂糖は控えめにして、甘さよりも軽やかな酸味を🍃🍃
生地は、シフォンとカステラの間くらいの
ふわっとしながらも、少し密度のある食感を目指して🥣
……が、クリームをしっかり冷やしたことで
生地がぎゅっと締まってしまい、
理想とは程遠い仕上がりに。
でも、見た目だけは想像していた通り🍃
ここでひとまず昇華🌿
失敗も含めて、夜中のお菓子作りは楽しい

ふわりと絞られた抹茶もんぶらんクリームは
栗のほくほくとしたコクがしっかり感じられて、
見た目以上に栗らしい味わい🌰🍃🍃
抹茶シロップや中の抹茶アイスは、
渋みやほろ苦さが穏やかで、甘さも控えめ🌿🍃🍃
上にトッピングされた生クリームが
なめらかで上品なコクがあり、
栗や抹茶ともよく合います。🌿
全体としてまとまりが良く、
バランスを大切にした上品な一杯でした。🍵
