A perfect fusion of bold Chinese flavours and spicy Maharashtrian magic—every bite is packed with heat and deliciousness. 🔥✨
Recipe:
1. Mix 250g AP flour with 130G water, 1/4 tsp salt
2. Knead until a rough dough ball forms. Cover and let it rest for 30 minutes.
3. Kneading again for another 5 minutes until smooth and divide into 6 pieces.
4. Shape into balls then roll into rectangular/oval shapes as shown. Rub with neutral oil and let it rest in fridge for AT LEAST 3 hrs but preferably overnight.
5. Take it out of the fridge and let it come to room temp (~20min). Using a chopstick create an indent in the middle.
6. Gently stretch the dough and then slap it on the surface of your table whilst stretching it apart until you get your desired thickness and length. Tear the noodle along the indentation and immediately place into boiling water (Get it boiling before you start). 2-3 noodle pieces serve 1.
7. Fresh noodles cook quite fast, once it floats to the tip, give it an extra 10 second and take it out. I blanched my bokchoi for around 30 seconds towards the end.

Blanched mushroom
