Ho seguito la ricetta tradizionale ma al posto del caffè ho utilizzato lo sciroppo delle pesche per inzuppare i savoiardi. Le pesce le ho tagliate a dadini e poste tra uno strato di crema e l’altro. Ho fatto delle monoporzioni in piccoli vasi da conserva e ho decorato utilizzando metà pesca. Per ottenere la forma di rosa ho tagliato la pesca a fette sottili e partendo dalla più piccola ho avvolto le altre fino ad avere il fiore. Ho poi aggiunto foglie di menta per decorazione.
250 gr circa di zucchero (la dose dipende dalla grandezza dei tuorli)
5 uova
500 gr di mascarpone
Pavesini o savoiardi
Una scatola di pesche sciroppate.
Sbattere in planetaria tuorli e lo zucchero almeno per 10 minuti. Montare a neve ben ferma i bianchi. Unire i tuorli montati al mascarpone girando delicatamente e poi unire gli albumi. Bagnare i biscotti scelti nel succo di conserva delle pesche. Iniziare con uno strato di biscotti alternando alla crema e a dadini di pesche.

Sapete cosa sono i cucunci? Non sono altro che il frutto della pianta del cappero.
Capperi e cucunci sono il risultato di 2 differenti fasi del ciclo produttivo di questa pianta. Quelli che normalmente si utilizzano in cucina e che vengono chiamati comunemente capperi, sono in realtà il bocciolo del fiore, un fiore bellissimo che purtroppo sfiorisce in fretta (lo potete vedere nella foto). Dopo la sfioritura inizia a formarsi e a maturare il cucuncio che quindi è il vero e proprio frutto (infatti al suo interno si trovano i semi).
Io ho una grossa pianta di cappero e quindi, dopo aver fatto una buona scorta di boccioli che metto sia sotto sale che sotto aceto, ne interrompo la raccolta e lascio che sboccino i fiori. Dopo l’appassimento del fiore iniziano a maturare i cucunci. La mia versione preferita è quella sotto aceto perché li uso principalmente per le tartine da aperitivo.
Per i cucunci sotto aceto utilizzo questa ricetta: preparo una salamoia con 1 litro di acqua in cui sciolgo un cucchiaio di sale fino.
Lavo i cucunci, senza staccare il picciolo, e li metto in un recipiente ermetico ricoperti dalla salamoia. La cosa fondamentale è che questa salamoia venga rinnovata tutti i giorni per 7/10 giorni (inizialmente l’odore dei cucunci non è piacevole, ve ne accorgerete quando cambierete la salamoia, ma è normale che sia così). Trascorso il periodo necessario metto i cucunci in barattoli sterili e li copro completamente di aceto di vino bianco al quale aggiungo qualche grano di sale grosso. Conservo in un luogo fresco e buio.

Ricetta per macchina del gelato Simac per circa 600 g di prodotto
100/150 g di sciroppo di menta (dipende da quanto volete intenso il gusto)
1 uovo
125 g di zucchero
150 g di panna
150 g di latte
Sbattere l uovo con lo zucchero, diluite con il latte la panna e la menta (assaggiare per vedere se avete ottenuto il gusto di menta voluto). Mescolare e mettere nella gelatiera

Ricetta gelato alla stracciatella (per gelataio SIMAC800):
150 g zuchero
300 g latte
200 g panna
Un pizzico di vaniglina
50 g di cioccolato fondente gratuggiato
Gocce di cioccolato per decoro
Sciogliere lo zucchero con un po’ di latte freddo, aggiungere il rimanente latte e la panna, profumare con la vaniglina. Azionare la gelatiera. A gelato pronto (assolutamente non prima) aggiungere il cioccolato gratuggiato. Servire su coni o coppette guarnito con gocce di cioccolato a piacere.
