we took a ferry overnight to Santorini with our rental car onboard (a first!), and drove straight to the red sand beach as, after getting a spanakopita of course at the only bakery that opened at 5am. we had the beach all to ourselves for a couple hours before tourists and tour boats started arriving, and it was truly a unique experience. it felt a little dangerous knowing of the landslides that had occurred there, and almost a bit eerie being there alone, but it made it all the more beautiful as the sunlight crept over the looming red cliffs. we saw it transform from a deep muted maroon to a bright auburn clay when the sun finally climbed over the edge. and yes, if you’ve read this far, it’s where he proposed. ♾️

- I used store bought puff pastry because I was too nervous to make my own dough 😅
- for future reference it’s better to make longer thin triangles to get more “rolls” because it’s hard to shape tiny triangles into a croissant
- brush with egg wash and place in 220 Celsius for 10-12mins
I forgot to take a photo of ALL of them but I made around 150 and it took me about 2-3 hours.. Happy Mother’s Day! 😂
