🫑 RECIPE
Ingredients:
1 red onion
1 red bell pepper
1 clove garlic
2 tbsp tomato puree
400g large jarred chickpeas
Salt & pepper to taste
1 ball of mozzarella
Handful chopped chives
👩🏼🍳 Method:
🧅 Start by adding the finely chopped red onion and diced red pepper to a large pan with a drizzle of olive oil, sauté off for around 6 minutes before adding the finely chopped garlic
🍅 Add in the tomato puree with a splash of water and fry off for a minute before adding the jarred chickpeas, add 150ml back into the jar, swirl around then add to the pan
🧀 Salt and pepper the pot, after 6-7 minutes tear up the mozzarella and scatter around the pan before popping in the oven at 200ºC (fan) for around 10 minutes (or option to pop a lid on the pot and heat on the hob to melt the cheese)
🍃 Serve with finely chopped chives and a final pinch of pepper.
