pork mixture:
• pork mince

smash pork mixture only low carb wrap of your choice (I used the wraps which I cut down to a smaller taco size)
place in pan meat side down for 5 minutes then flip to toast other side
top with chopped slaw and dumpling dipping sauce (I used malt vinegar, tamari, chilli oil), sesame seeds and chopped coriander 🌿

Mushroom bun, home made patty, melty cheese, caramelised onions, tomato, lettuce, burger pickles and callowfit sugar free tomato sauce 🍔
Ingredients:
• 2 tbsp minced garlic
• 2 chicken breasts sliced thinly
• 1 pack of slendier flat noodles
• 2 bok choy or pak choy
• 1 small broccoli head
• 1 tbsp coconut aminos or GF tamari
• 2 tsp vegemite
• 3 eggs, whisked
• 2 tsp chillies flakes,
• 1 spring onions finely sliced
• 1 tsp apple cider vinegar
• 1 fresh chilli thinly sliced
• 1 lime (must!!)
• sesame seeds
Method:
Heat 2 tbsp oil in wok (or frying pan) over medium heat. When oil is hot fry garlic for about 10 seconds before adding chicken
Stir fry for 4 – 5 minutes tossing chicken. If the chicken is releasing a lot of moisture, pour off the juices add the remaining olive oil and cook chicken until it is lightly golden.
Add coconut aminos/tamari and Vegemite and cook for further 2 minutes
Turn heat down add drained and cleaned noodles, 1 tsp of chilli flakes and bok choy
Steam broccoli heads in the microwave with some for 5 minutes and add to pan
Cook for 2 – 3 minutes stirring.
Move meat and noodles to one side of pan turn up heat to medium-high and add egg
When egg is scrambled mix through noodles and chicken and cook 1-2 minutes to give a little char to the ingredients.
Stir through chillies, spring onions, and vinegar.
Before serving sprinkle sesame seeds and a good squeeze of lime juice.

Saturday night fake-away - Thai beef massaman and pad see ew. HONESTLY SO FRIKKEN GOOD I am GOBSMACKED at how amazing this turned out and how I've recreated one of my favorite Thai eats into a totally keto and low carb success (you legit cannot even tell 😅)
So quick to whip up this is going to fast become a reoccurring dinner!
