I have a lovely couple to thank for that who had stopped up ahead and were taking photos of something. I jokingly said maybe it’s a kingfisher, and it was!! We stopped and watched for a while and I leant them my binoculars, and sent them this photo I snapped which they were so grateful for - I was equally grateful that they enabled me to spot the kingfisher in the first place. 10/10 wholesome interaction (with wildlife and humans!). Simple recipe below 👇🏻
Ingredients
350g SR flour
2 tsps baking powder
175g butter
115g caster sugar
100g sultanas/raisins
3/4 tsp mixed spice
1 large egg
~2 tbsps milk
🌼 rub together the butter, flour and baking powder until the mixture resembles breadcrumbs
🌼 add the sugar, sultanas, mixed spice
🌼 beat the egg with the milk, then add to the mixture to form a firm dough, adding more milk if necessary
🌼 roll out the dough in a lightly floured surface to a thickness of around 5mm then cut into rounds
🌼 cook on a hot griddle on a low heat for about 3mims on each side until golden brown
🌼 cool on a wire rack and sprinkle with caster sugar
