This is how I make gravy in general if I’m using store bought gravy powder & I swear by it, you can also replace oil with butter or the water for thickened cream add mushrooms, tomato or onions.

Lately I’ve been thinking a lot about how much food is connected to memory, culture, and identity.
As a Tongan born & raised in Australia, there were so many little habits around food that I never questioned at the time. The way my mum and her siblings ate, how food was shared, stretched, respected, and never wasted. Back then it just felt normal to me.
Now that I’m older and on my own cooking journey, I realise those small habits shaped the way I see food today. They taught me appreciation, creativity, and how much love can exist in a simple meal.
Sometimes I wish I asked more questions when I had the chance. About the meals, the traditions, the stories behind why things were done a certain way. Because food carries so much history, especially in Tongan families.

I started really cooking after we lost our mum in 2017. At first, it was just therapy for me — a way to grieve, to feel close to her again, and to learn how to navigate life without a mother’s guidance. Cooking helped me keep her with me through her recipes, and over time, it became so much more.
Sydney will always be home — it’s the place and the memories that shaped me. But Canberra is where this page was born. Moving here gave me the space to grow and create.
Lo1ah_Cooks is really my journal. A place to remember my mum, and to connect with anyone who might resonate with my food or my story. I’m not a chef and I’ve never had any formal training — I was simply blessed to grow up surrounded by a village of incredible cooks. A lot of what I share here is made up of bits and pieces I’ve learnt along the way, memories, and flavours I’ve experienced over time.
