This cheesy potato & broccoli casserole is proof that comfort food can still have balance. Creamy but not greasy, cheesy without going overboard, and meat-free without feeling like something’s missing.

Quick PSA: if you’re picky about broccoli texture, you can absolutely add it later in the bake. Me on the other? I’ll eat broccoli raw or slightly overcooked, so I’m not stressed 😌

This is one of those meals that works for dinner, lunch, or “lemme reheat a little something” the next day. Cozy, flavorful, and made with simple ingredients.

DC parking signs be like: No parking, except sometimes, unless it’s raining. Or a holiday. Or you blink too hard but you can only park on Tuesdays, during a full moon, if you’re facing east, but you need a permit once street sweeping is complete but never park here.

And somehow… I’m still wrong every time.

I grew up eating black-eyed peas as an everyday side dish, not just a holiday thing. My grandma made these thangs often 🤣🤣🤣 but I remember my cousins and I would add sugar too ours 🫣. Shhhhh! Don't tell my granny!

Traditionally, Southern black-eyed peas are cooked with ham hocks, smoked turkey, or bacon… but for January I’m going no meat. Still seasoned, still creamy, still satisfying, just lighter.
I’m making these in the Instant Pot, so no overnight soaking needed. Soaking helps beans cook faster on the stovetop, but pressure cooking already handles that part. (I still rinse and pick through them though 😉).

I added kale for extra heartiness and flavor because that’s how I like to balance comfort food these days....familiar, but a little more intentional.
These came out thick, cozy, and full of flavor. Serve them as a side, over rice, cauliflower rice, or straight out the bowl.

👉 Full recipe will be posted on the blog.

I know my drink is wrong as soon as i look at the cup, but when I take that first sip my brain immediately goes, “……I’m not sure.” 🤣🤣🤣

I don’t argue.
I don’t complain.
I just frown up, power through, and hope tomorrow’s Dunkin shift is different.

Tell me I’m not the only one living this life. I can always tell who made my drink that day and that's how i know they were understaffed that morning.
That time I pulled off bringing 23 people together under one roof......yes, the family trip made it out the group chat! (Check out my "Family Vacay" highlight for more behind the scenes footage)

We spent a four-day in Orlando, Florida, and this experience checked off a longtime goal of mine — bringing both sides of our family together to finally meet, mingle, laugh, and really connect.

One of the most special moments for me was watching relationships form across generations especially seeing my mother-in-law and my brother & sister’s mom build such a genuine connection. Add in having my brother (who almost couldn’t make it), all the kids, in-laws, grandsons, nieces, nephews....just good quality time together… this one meant a lot.

I also hired for a welcome lunch and on day 3 he did a full brunch. The rest of the time, we cooked, grilled, and ate together as a family — simple, intentional, and so good. Would you believe that nobody wanted to dine out??

You don’t need an international trip to create moments like this. Domestic works too. What matters is intention, planning, and good energy.

I'M NOT A DIETITIAN/ NUTRITIONIST, JUST DOING WHAT WORKS FOR ME!

Who says dinner has to mean dirtying every dish you own? These cajun chicken and veggie foil packs are the oven-to-table MVPs this weekend. Juicy chicken, tender veggies, and bold flavors—all bundled up like little presents. 🎁 Bonus? Cleanup is basically non-existent (you’re welcome).

It’s easy, healthy, and fancy-looking enough to make you feel like you’ve got it all together. Because you do.

🫶 Save this for the next time you’re not in the mood to wash dishes (which is…always).

Here's the full recipe...

What you'll need:

4 boneless, skinless chicken breasts, diced
3 cups broccoli florets
1 red bell pepper, cut into strips or diced
1 green beller pepper, cut into strips or diced
1 yellow bell pepper, cut into strips or diced
2-3 potatoes, diced
1 onion, cut into strips or diced
2 tbsp olive oil/ Cajun Lux Butter
2 tsp garlic powder
2 tsp onion powder
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste

What to do:

1. Preheat your oven to 400
2. Cut 4 large pieces of aluminum foil, about 12x12 inches each.
3. In a small bowl, mix the garlic powder, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
4. Drizzle olive oil over (or add butter) to the chicken breasts and rub with half the seasoning mix.
5. Toss all the vegetables in a large bowl with the remaining seasoning and a little extra olive oil if needed.
6. Place a diced chicken on one side of foil sheet and arrange veggies on the other side (I try to add more veggies than chicken)
7. Seal foil tightly to create a packet.
8. Place the foil packs on a baking sheet and bake for 35-40 minutes, or until the chicken is cooked through & potatoes are tender
9. Carefully open the packs (watch out for steam!), garnish with parsley, and serve directly from the foil for easy cleanup.
