Today's challenge was YELLOW, so I made PUMPKIN RISOTTO, which turned out more orange than yellow 😅
RECIPE BELOW
Ingredients:
Some peeled and de-seeded pumpkin
1 cup of arborio rice
1/2 of diced onion
2 cloves of minced garlic
1/4 of diced capsicum
1 tblsp of olive oil
1 1/2 cups of vegetable stock
Some pepper
Some nutmeg
4 tblsp of vegan cream
Blue Cheese
Fried tofu (optional)
Nuts and seeds mix for garnish (optional)
1. Mix the pumpkin with salt& pepper, olive oil, and oregano and then roast the pumpkin for 20 minutes in 200 degrees Celsius. Let the pumpkin cool down, and then make a puree by blending the pumpkin around 1 minute.
2. Heat up the oil over medium heat. Add the onion and garlic. Cook for around 5 minutes and then add the Capsicum. Cook for another couple of minutes.
3. Add the rice and cook another minute while stirring. Add some of the stock and let it cook under the lid. When the stock is absorbed, add more stock and cook under the lid. Continue until you have used all the stock. When rice is almost ready, add the pumpkin puree and cream. Cook until rice is ready.
4. Add your preferred toppings and more blue cheese.
5. Enjoy as an entree or main!
