Ingredients
170 g (¾ cup) unsalted butter
150 g (¾ cup) brown sugar, packed
50 g (¼ cup) white sugar
1 large egg + 1 egg yolk (room temp)
2 tsp vanilla extract
200 g (1 ⅔ cups) plain flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt (plus flaky salt for topping)
200 g (1 ¼ cups) dark or semi-sweet chocolate buttons
Method
Melt the butter in a small saucepan over medium heat, swirling often. Cook until golden brown specks form and it smells nutty. Immediately pour into a bowl to cool slightly (about 10 minutes).
Whisk together the brown sugar and white sugar until combined. Add egg, yolk, and vanilla, whisking
until glossy.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
Add the cooled butter to the wet mix and whisk until combined.
Stir the dry mix into the wet until just combined. Fold in the chocolate buttons.
Cover and refrigerate for at least 1 hour (or overnight for best flavour and thicker cookies).
Preheat oven to 180°C. Line trays with baking paper. Scoop dough into 2-3 tbsp balls, space well apart. Bake 10 minutes or until edges are golden but centres look slightly underbaked.
Sprinkle with flaky salt while warm. Cool on tray for 5 minutes before moving to a rack. Enjoy!
