You only taste pistachio; no coconut. At kubé, we only use REAL food ingredients! No chemicals, no preservatives, and no artificial flavors.

We use real pistachio-nut-butter, a little bit of real almond extract to lift and compliment the high sweet notes in pistachio nut butter and roasted pistachios. Then, we add in a little bit of real Madagascar Vanilla Bean extract to warm the base note in the pistachio nut butter. Next, we generously add crunchy, roasted pistachios that are unsalted & salted to the silky and creamy pistachio cream base.

This Pistachio came out so silky sexy - just like I wanted it to come out ….but I definitely had to practice with it because pistachio nut butter is very thick and dense! I had to study the biology of proteins again (long chains of polypeptides and made from amino acids), and use less pistachio nut butter this time, as opposed to last time, so that the overrun air can go through the protein (nut butter) and good fats, and freeze with perfect fat globules sticking together called “partial coalescence” in the science of ice cream making.🤩 I am an expert at making artisanal, premium, vegan full-fat coconut ice cream be smooth and creamy, with bold flavors from fresh fruit, seeds, nuts, and roots!

This was when we just finished setting up our tent at 3:30pm, at Santana Row, San Jose, Artisanal Farmers Market, 2025 (each Wednesday 4pm -8pm in (April through September we only), and customers came over to try samples, and purchased lots of kubé nice cream!

Everyone told us we should have our ice cram shop on Santana Row, because we make the BEST TASTING and most artisanal ice cream in such clean and bold flavors; and there are no non-dairy options in the South Bay! We attracted lot of attention out there and had a few strange folks ask us in strange and scrutinizing ways, “why and how do YOU know how to make this coconut cream,” as if it’s exclusively only in their one culture.

I just explained to them that I’m tapped into the spirit of my ancestors who made coconut cream, and Im a skilled food artisan with inherent and cultivated talents in Biology, plant biology, food biology and where I studied plant-based fats, played with coconut cream a lot, and studied its molecular structure, and that I’m a super-taster who knows how to make the most premium, artisanal, non-dairy ice cream come to life with real fruit, seeds, roots, and essential oils.

I’m just gonna leave it there and say - many folks are just are not used to seeing Black folks in leadership positions and making high quality, artisanal plant-based food delights!

People forget too, that coconuts grow in 90-countries around the world, and so many diverse cultures and ethnicities of people work with coconuts.

Each week we sold out of so many flavors and had to remake so much ice cream for the next week! This was one of the best markets for us, and Livermore farmers markets where people purchased soooooo much kubé and kept asking us to move and build kubé in the South Bay!

The tropical countries are calling us because I need to build kubé where the coconut trees grow and avoid tariffs which has made almost all our ingredients increase between 50-60 percent.

My motto is: We exist to positively rebuild and transform. Continue to be a student of life! Transformation is always required!

Y’all must know that real, fresh Coconut cream (not from the can) is so mild in coconut flavor, that what ever fruit you add to it totally takes over the flavor. Im also really good at mastering the art and science, of ratios of fat to fruit puree, and fresh pressed juice to make a creamy texture.

Biology was my minor in college and I studied lots of different types of good and bad fats. Coconut is a good seed fat with a ton of minerals and medium-chain-fatty acids that your liver easily breaks down.

Beautiful people, thank you for all the love and support throughout the past 10-years (2025-2025). We have made beautiful, artisanal, healing, and vibrant non-dairy ice cream for so many people, corporations, cultural events, & weddings.

I am writing to inform you all that kubé will be closing by Dec. 31, 2025, due to rising costs of business operations in the Bay Area, tariffs on all our raw ingredients and coconuts, that we import from Mexico,

We have experienced such diabolical behavior from white supremacists, and commercial property owners in Oakland and Berkeley, and all over the Bay Area.

I experienced a hate crime with death threats, by a white supremacist man, while I was selling kubé with an employee (on Santana Row, San Jose), this summer, and we had to file a police report and write many letters to the real estate owners of Santana Row and City Council members to get the perpetrator evicted from housing there.

We have experienced constant systemic racism and discrimination by commercial property owners who do NOT want Black businesses like us, to have visibility, and make money, or bring our ethnically diverse customer base to a storefront in very nice areas of Oakland, like College Avenue in oakland and in Berkeley.

These commercial property owners continue to select non-Black business owners over us, to lease their commercial property, with only 2-years of experience in business versus us, at kubé, with 10-years of business experience.

These racist property owners want to stifle and stagnate Black businesses and continue to economically lynch us, just like all the Community Development Financial Institutions (CDFI’s) that continue to place barriers toward accessing capital (even with our high credit score & increasing revenue ).

We must recognize that Capitalism was never designed to work for us, as Black purpose-driven businesses, even though we solve market problems for targeted customers with product market fit, demand, skill, strategy, talent, and hire consultants and part-time CFO’s to support us with greater insight.

We deserve better! We have put in the work, time, skill, joy, discipline, and consistent dedication.
