Kosher Bacon, Lettuce, Tomato, and Avocado on Challah #blta
This sandwich makes great lunch or dinner for 2, 3 or more people, depending on the size of the challah.
Ingredients:
1 challah - you choose the size
Beef Fry AKA Kosher Beef Bacon
1 avocado
1/2 teaspoon olive oil
1/2 teaspoon mayonnaise
1/4 teaspoon water
Red chili flakes (optional but highly rec)
Lettuce
Tomato slices
Flaky salt
Directions:
Slice challah bread in half, and scoop out most of the dough. Toast it up any way you like, I did it in my air fryer. Place beef fry in single layers into air fryer Drawers for 10 minutes at 375°. In the meantime, prepare the avocado in a small bowl by combining it with the olive oil, mayo, water, and mixing it well. When the beef fry is ready, place it on paper towel and try to soak up as much excess oil as possible by patting it with more paper towel. Evenly schmear the avocado onto the toasted challah and proceed to add the rest of the ingredients as I do in my video. This is a delicious, satisfying and enjoyable ‘s you will ever make, let me know if you make it!

Koshermexican Beef Stew
This recipe is meant for a very large crowd, however, you can adjust it by cutting it in half and you still won’t go wrong. The recipe calls for three different types of “sauces” and it is a bit labor intensive, but so worthwhile.
Ingredients:
7 lbs. beef stew meat
S&P
Oil for browning
2 carrots, sliced diagonally
2 Russet potatoes, quartered, and sliced
Sauce No. 1:
1 tablespoon dried thyme
1 tablespoon dried oregano
1 teaspoon ground cloves.
1/2 tablespoon salt
3-4 garlic cloves, peeled
Blend all of the above ingredients thoroughly.
Sauce No. 2
6-8 dehydrated Guajillo chili peppers,
Stems and seeds removed, rinsed and simmered until tender, then blended in small blender along with some of the water from the simmering.
Sauce No. 3
10 Roma tomatoes, quartered
5 tomatillos, quartered.
1 onion cut into chunks
Place above ingredients into sauce pan with hot oil and mix for several minutes until all ingredients become softened. Remove from heat and when it has cooled off a little bit. Pour into blender and blend thoroughly.
Putting it together:
Place beef chunks in large bowl, add salt and pepper and mix well. Brown, the beef in a bit of hot oil, stirring occasionally. While the beef is browning, prepare the above sauces. Add sauce No. 1, stir and allow to simmer for a few minutes. Add sauce, No. 2 and do the same. Finally add sauce No. 3 from the blender cover and simmer for approximately 45 minutes over low medium heat.
Add sliced carrots and jalapeño salt, simmer for a few minutes, then add sliced potatoes, cover for a few minutes until potatoes become tender, remove from heat, and stew is ready to be enjoyed!

Chicken Soup the Mexican Way
Ingredients to make the soup:
1/3 piece of an onion
2 celery stalks, washed and cut in half
1/2 bell pepper (because I had it)
3 carrots diagonally sliced
2 garlic cloves, whole
1 pullet cut in 8 - preferably from
1/4 washed cilantro bunch - stems and all
Salt to taste
Ingredients to prepare it the Mexican Way:
1 firm but ripe avocado - cubed
1 fresh lime juice
2 tablespoons diced onion
2 tablespoons chopped cilantro
1 Serrano pepper, chopped
Directions:
Bring to a boil a large pot filled with water.
Add all of the soup ingredients, except the 1/4 cilantro bunch. Once everything is boiling, you will see foam rise up to the top, remove all of the foam very carefully until broth is crystal clear. Cover the pot and simmer over low medium heat for 45 minutes. Uncover the pot add cilantro bunch, turn off the heat and cover again right away! Leave covered for 15 minutes, then uncover and remove cilantro. Serve yourself a heaping bowl of soup, then add any or all of the “Mexican Way” garnishes listed above. Enjoy y salud!

Authentic Mexican Rice
Ingredients.
2 cups long grain white rice.
3/4 onion, dice 1/2 of it, reserve the rest ⬇️
Sauce:
5 Roma tomatoes
2 garlic cloves
Remaining piece of onion
1 teaspoon salt
3 cups chicken broth (or broth of choice)
1/4 cup diced carrots
1/4 cup green peas
Directions:
Place the rice inside a strainer inside a bowl, and fill with water. Allow the rice to soak for about 10 minutes. Drain starchy water from the rice, and rinse it well under running water, then set it aside to dry. Heat oil in a large sauce pan, then add the rice and allow to brown a bit, then add the diced onion, and mix.
Place, tomatoes, the rest of the onion, and garlic in a food processor, and process until very smooth. When rice reaches a deep Golden color add the contents of the food processor and mix them in with the rice. Add the broth, the carrots, peas, and optional chili pepper. Bring liquid to a simmer, lower the heat and cover for approximately 12 minutes. Uncover and test to see if the water has evaporated, and if rice is fully cooked. Gently fluff it with a fork. Cover again and let the rice rest for about 15 minutes, serve right away or allow it to cool and refrigerate.

Deconstructed Chiles Rellenos

If you’re intimidated to make chiles rellenos, try this simpler method!
Ingredients:
8 poblano peppers
14 oz. grated cheese (I used Monterey Jack and Manchego)
8 eggs, separated
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon maseca flour (optional)
The Sauce:
1 onion for caramelizing
5 Roma tomatoes
1 garlic clove, peeled
1/4 onion
1 Chile Serrano
1/2 teaspoon chili powder
1 teaspoon salt
Directions:
Dab a bit of oil onto peppers and char/roast in oven, air fryer or open flame. Remove the stems, skin and seeds, cut in quarters.
Beat egg whites with salt, baking powder, and optional maseca flour. When stiff, beat in the egg yolks.
Spray a baking dish with oil, then smooth out a layer of beaten eggs. Cover with 1/2 of the chili pepper quarters, and a layer of grated cheese. Repeat with layer of beaten eggs, chilis and cheese. Into a 350° oven for 20-25 minutes or until cheese becomes slightly golden. While this is in the oven, make the sauce. Brown the onion, and while it’s browning, place the sauce ingredients into a blender, and blend thoroughly. Pour onto browned onions and allow to simmer for 8-10 minutes. When ready, remove baking dish from oven and serve immediately with piping hot sauce. Enjoy! #kosherrecipes #mexicanrecipes #shavuotrecipes #chagsameach

These are the best potatoes I’ve ever

My only tweak was to boil the potatoes for six minutes.
Ingredients:
8 Yukon gold potatoes, cut in wedges
1 tablespoon Baking soda
1 tablespoon salt for the water
Seasoning
1 tablespoon paprika
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon garlic powder
1/2 cup olive oil
3 tablespoons potato starch
Instructions directly from
1. Preheat your oven to 400°F (200°C).
2. Peel, wash, and cut your potatoes into even wedges.
3. Add potatoes to a large pot. Cover with water, then add baking soda and 1 tablespoon salt.
4. Bring to a boil and cook for about 8 minutes, just until a knife slides in easily. Do not overcook.
5. Drain the potatoes. No need to rinse.
Shake the pot gently to rough up the edges.
This step is key for that crispy texture.
6. Add paprika, salt, black pepper, garlic powder, olive oil, and potato starch. Toss well until fully coated.
7. Transfer to a baking sheet and spread in a single layer. No parchment paper, you want direct contact with the pan for maximum crispiness.
8. Bake for about 40 minutes, flipping halfway through, until golden, crispy, and irresistible.
Note: My only tweak was to boil the potatoes for six minutes
