Savory Italian sausage, sweet peppers, and aromatic herbs come together in this comforting, oven-baked zucchini dish. Finished with a golden parmesan–panko topping, it’s the kind of recipe you’ll make again and again.
🇮🇹 Italian Sausage & Pepper Stuffed Zucchini
Baked in Staub
Ingredients
-2 medium zucchinis
-Italian sausage (casing removed)
-1 shallot, diced
-1 small onion, diced
-2 cloves garlic, minced
-1 red pepper, diced
-Reserved zucchini flesh, diced
-Tomato paste
-Fresh thyme
-Salt & freshly ground black pepper
-Grated parmesan cheese
-Panko breadcrumbs
-Olive oil
👩🍳 Method
1. Slice the zucchinis lengthwise and hollow out the centers. Dice the removed zucchini flesh and set aside.
2. Heat olive oil in a pan over medium heat. Brown the Italian sausage, breaking it up as it cooks.
3. Add shallots, onion, and garlic. Cook until soft and fragrant.
4. Stir in diced red pepper, reserved zucchini flesh, tomato paste, thyme, salt, and pepper. Mix well and cook until fully combined.
5. In a bowl, combine parmesan and panko breadcrumbs.
6. Fill the hollowed zucchinis with the sausage mixture.
7. Arrange in a Staub baking dish and top generously with the parmesan–panko mixture.
8. Bake until the zucchinis are tender and the topping is golden and crisp.
✨ Serve hot, straight from the oven.
