店名を改め、9/1〜約1ヶ月間のリニューアル期間を経て、
10月初旬より新たにオープンいたします。

『店舗営業についての大切なお知らせ』
「洋菓子と珈琲 流星」は、「喫茶室 山脈」の
姉妹店としてオープンし、これまでたくさんの
お菓子をお届けしてまいりました。
この度、オープンから流星のお菓子を
手掛けてきたパティシエが
長年の夢を叶え独立し、新たなお店として
スタートすることとなりました。
「洋菓子と珈琲 流星」としての店舗営業は、
8/31（土）が最終日となります。
なお、流星の焼き菓子は引き続き、
喫茶室 山脈のオンラインショップにて
ご購入いただけます。
現店舗はパティシエの世界観が楽しめる
洋菓子店として店名を改め、
新しくスタートいたしますので、こちらも詳細が
決まりましたらご案内させていただきます。
また、8/10（土）より感謝SALEを開催いたします。

夏におすすめの新ドリンクが完成しました✨

本日は新商品のご紹介です😊
「Rode」(ロド)
桃の果肉入りのジュレと桃のムースに甘酒のクリーム、
土台はスモモを一緒に焼き込んだタルトになっております。
「Rode」は友人が営むフレンチで食べたデセールが
とても美味しかったのでオマージュして作った商品です！
フレッシュの桃とスモモに桃のジュレ
甘酒のアイスを合わせたデセールでした。
パティシエはよく桃のお菓子に
フランボワーズを合わせます。
酸味により桃の甘みに輪郭がつき味がはっきりします。
その酸味の役割をスモモで表現するのは
面白いなーと思いました✨
また甘酒ですがまったりのびるような感じではなく
アイスにすることでつめたさと
ふわっと瞬間的に甘酒を感じるところが
みずみずしいフレッシュの桃、スモモと合わせて
美味しく感じられるポイントかなと勝手ですが思いました！
この辺りを意識して
甘酒はふわっと瞬間的に感じられるように
口溶けの良いクリームで表面に
桃のジュレは桃のフレッシュ感、みずみずしさ、
ムースで桃の味を補強して
スモモは酸味をはっきり感じられるよう
ジャムにしても良いかなと思いましたが
ジャムだと少し甘いかなとか
タルトにスモモのジャムを塗るより
一緒に焼き込んだほうがタルトの主張が強くなりすぎず
上のパーツとのバランスが良いと思い
タルトに一緒に焼き込みました！
いろいろ考えて作ったケーキです！

今、当店では季節の焼き菓子として
レモンケーキを販売しております😊
未包装の朝焼きレモンケーキ、
包装されているバラ売りのレモンケーキ、
5個入りのレモンケーキセットがございます。
未包装の朝焼きと包装済みのもので
何が違うの？というお声をいただきますので
ご説明させていただきます🍋
まず食感が違います！
朝焼きは表面がサクッとしており
中がしっとりしたような食感になります。
包装しますと密封された袋の中で
水分が乾燥した部分に移動しようとしますので
全体的にしっとりとした食感になります。
未包装で2日目とかになってくると
どんどん乾燥していってしまいますので
表面だけサクッとして中がしっとりという状態は
当日の朝焼きのみになります！
次に味です！
朝焼きはレモンの酸味や風味を
とても強く感じます！
包装したものはいわゆる味が馴染む
という状態になります。
角が取れて優しく広がるような味わいになります。
他にも油分を強く感じたりとか
細かいことをいうといろいろありますが
主にはこの2点が大きいかなと思います！
どちらが良いとかではなく好みだと思います！
外サクッ中しっとりが好きな人もいれば
全体的にしっとりしたほうが好きな人もいますし
味のエッジが効いていて
強く感じるほうが好きな方もいれば
まるみのある優しく広がる感じが
好きな方もいます。

今年も桃のタルトが始まりました😊
ショーケースにはカットを並べておりますし、
ホールサイズもご予約いただければ可能です🙆♂️
季節ごとにいろいろなタルトをお作りしておりますが
やはり桃のタルトは大人気で勢いが違いますね✨
丸ごと桃のタルトやらないですか？
と言った声を結構いただきます。
確かに丸ごと桃のタルトはどこでも大人気の
マストアイテムですよね。
、、、やらないのではないんです。
やれないのです😅笑
試作したりもしたことはあるのですが
なんといってもバランスが難しい😓
これなら桃食べればいいって感じになってしまいます。
納得のいく丸ごと桃のタルトが出来れば
全力で出していこうと思いますが
とりあえず今のところは
このタイプの桃のタルトが自分の中でベストですので
こちらで食べていただければなと思っております😊💦
ザクっとしたクッキー生地に
ほろほろとしたアーモンド生地のタルト台。
フランボワーズのジャムをタルト台に塗り、
バターとカスタードを合わせたムースリーヌクリームに
中にはゴロゴロと大きくカットした桃、
外側には薄くスライスした桃。
切り方が違えば食べた時の感じ方も違います。
最後に表面に桃のピューレを加えたツヤがけ。
この組み方が今のところ1番理想的なバランスです👍
