The 16th Annual Vancouver starts today and we have two great, new hot chocolate pairings to share with you!
First off is the CHAMPU-CHAMPO.
This hot chocolate draws inspiration from two recipes close to our hearts – the Mexican Champurrado 🇲🇽 and the Philippine Champorado 🇵🇭. We’ve made a rich, frothy hot chocolate that incorporates rice, corn, and cinnamon with our bean-to-cup dark chocolate, made from scratch with cacao beans sourced from the Southern Philippines. It’s topped with crispy rice and a swirl of sweetened condensed milk.
The accompaniment this year is a delightful treat made by our friend Issha Marie from A pinipig-malt chocolate amaretti - a classic almond amaretti flavoured with Issha’s homemade malted milk chocolate and pinipig, a traditional Filipino ingredient made from young, glutinous rice grains that are pounded flat, and toasted.

A very special Maker’s Release, Kasama Chocolate’s very first Tree-to-Bar took almost two years in the making. It is crafted with cacao from single estate in Tuao, Cagayan Province in the Philippines 🇵🇭. Vince and Oliver harvested, fermented, and dried this very special batch of cacao with their farming partners in spring 2024.
Snap and bunny sniff. Hello banana! Sweet and tangy, reminding me of Taiwanese mountain banana.
It started with light and breezy, young banana, floral honey, ripe banana, then playful little pops of Ceylon cinnamon and nutmeg. It’s like a morning garden walk… but someone hands you a tropical Negroni halfway through. Balanced, refreshing, a little curious, and very fun to explore!

Recently we tasted these exceptional four bars we bought from Kasama and in Vancouver when we visited last month. We loved hanging out with Vince, Oliver and at the factory on Granville Island – they're all doing amazing work! 🤎
I know this is a bold statement, but Kasama's Philippines single origin bars are the best examples of Filipino chocolate/cacao I've tried. They have a few core range bars made with Filipino cacao, and often make exciting limited release bars as well. 🇵🇭
As for the Yi Shi Cacao collab bar – which is made with cacao from Pingtung, Taiwan – this is one of my top bars of the year! Olivia went to crazy lengths (literally) to get hold of these beans in Taiwan and bring them back to Vancouver in her suitcase. It's such a cool story, and her dedication was so worth it! 🍫
Here are my tasting notes for the four bars, for anyone who might be interested...
🇹🇼 Yi Shi Cacao x Kasama Taiwan 70% collab: guava, coconut, golden plum, elderflower
🍒 Echague, Isabele, Philippines 70%, limited release: raisin, tobacco, toffee, cherry, coffee
🥃 Tanduay Rum 75%, barrel-aged special release: piña colada, coconut yoghurt, strawberry, caramel
🌿 Spring Awakening, seasonal release: lemondrops, pine, oak

Tuao 70% (Cagayan Province, Philippines 🇵🇭)
This special release marks our first ever, official batch of Tree-To-Bar chocolate, crafted from single estate cacao beans that we personally harvested, fermented, and dried with our farming partners at the source in Tuao a town in the northern Philippine province of Cagayan.
Each cacao pod and bean was meticulously inspected and fermented in custom boxes made from the wood of the Northern Philippine Santol (Cotton Fruit) tree. The cacao was then brought back to Vancouver where it was roasted, winnowed, conched, and molded into chocolate bars, giving it bright, edgy and angular notes of ripe banana, green apple, and grape must.
The cover art features a watercolor design of the Cagayan River (Río Grande de Cagayán), the longest and largest river in the Philippines, which has sustained various tribes in Northern Luzon for centuries.
