When purified water is cooled below its freezing point without turning into ice, it enters a supercooled state. This occurs because pure water lacks impurities that typically serve as nucleation points—sites where ice crystals can begin to form.
When the supercooled water is disturbed, such as by pouring it over an ice cube, it triggers rapid crystallization, causing the water to freeze almost instantly. This transformation from liquid to solid happens because the introduction of an ice cube provides a surface for the water molecules to latch onto and form ice crystals. The process showcases not only the unique properties of water but also fundamental concepts in thermodynamics and phase transitions.

Ingredients
•10 Cups Diced Watermelon
•1/4 cup Honey
•1 tablespoon lemon juice
Directions
1)Chop watermelon up into small pieces and add to blender. Blend until smooth.
2)Pour into a bowl through a mesh strainer lined with cheesecloth.
3)Let drain for a few minutes until you’re mostly left with watermelon pulp.
4)Add pulp to a bowl, mix in the honey and lemon juice.
5)Wet your parchment paper and squeeze out the extra water. Lay flat on baking sheet.
6)Pour your mixture on the parchment paper 1/4th of an inch thick.
7)Bake in the oven at 175°F for about 4 hours. It will be ready as soon as the top is dry to touch and no longer tacky.
8)Cut into strips and enjoy! 😊
