How can ice be a high-end? When I first heard about the popular shaved ice shops in Japan (whose desserts often go for upwards of ¥2000), I couldn't imagine spending that much on an ice-based dessert. However, shaved ice served at cafe is an entirely different experience than the cup of ice and syrup I grew up on in the USA. Interesting flavor combinations, unique and labor-intensive fillings, and elegant visuals... what's not to love? Even the ice itself is differs from shop to shop depending on a variety of water types and shaving techniques to result in fluffy or flakey textures. While summertime is the best time to enjoy shaved ice, speciality shops are popular year round with seasonal flavors (like this sakura one!) drawing crowds from near and far.

I'm not exactly sure why, but I'm pretty certain that I tried konpeito candy as a child in the US. Used to all the intense flavors of US candy, I didn't have much appreciation for the mild flavor of konpeito, which is mostly just interestingly textured white sugar. This is because konpeito were introduced to Japan from Spain in the 16th century when sugar was seen as a luxury, and traditionally, there was no flavoring added to the white sugar. The konpeito of today have involved, often featuring flavors like strawberry, yuzu, or melon. Nonetheless, the flavors are still very subtle, allowing for the texture and taste of the white sugar to play the starring role. As I've gotten older, the understated elegance of these candies has become more appealing to me, and they are a lovely little treat to nibble on alongside a cup of tea.

"My food is looking at me!" That was my thought at the first company dinner I was invited to when I moved to Japan. While it is entirely possible to avoid all seafood in Japan, it's still surprisng how frequently you find your seafood looking back at you. While it can be a bit disconcerting at first, I've come to appreciate the rustic and authentic presentation, and even enjoy the occasional fish eyeball or whole shrimp (shell, head and all!) Japan has taught me to be more open-minded and experimental with my food, and in turn, appreciate food and culture at a much deeper level.

Most countries have their own take on fried chicken, and Japan is no exception! Marinated with ingredients like soy sauce, ginger, and mirin, coated in potato starch, and deep fried, kara-age are little bites guilty pleasure often served at bars or karaoke booths. They are also always a hit when packed into lunch boxes, and I've discovered that they can hold their crunch surprisingly well over a few hours. Hot tip: if ordered family-style at a restaurant, a slice of lemon is often served with kara-age. It's considered proper manners to ask permission from everyone at the table first before going ahead and squeezing that lemon juice on them!

My knowledge and appreciation for ramen as evolved over the years. Growing up in the 90s and 00s, I often ate instant ramen as an easy lunch, topping it with whatever was handy: peas, cheese, ham, or other creations. When I moved to Japan and experienced fresh ramen, I realized how delicious the classic and authentic toppings like pork, eggs, and seaweed could be. It was only after living here for a few years that I discovered the regional variations, from black garlic in Aomori, or Nagasaki chanpon topped with veggies and seafood. One variety that really stands out to me is Hokkaido's butter and corn ramen. It may sound odd, but the combination of textures and flavors really works!

Aside from bananas and honey on toast, I had never eaten fresh fruit and bread in the same bite before coming to Japan. To be honest, a sweet sandwich sounds strange at first. However, I quickly discovered that the standard Japanese sandwich bread is super soft and slightly sweet. When stuffed with fruits and whipped cream, it's reminiscent of a cake, although a lot less sweet than the ones I ate growing up. I wasn't sold on the concept immediately, but after trying it a few times, the fruit sandwich has grown on me, and I even occasionally make some myself if I'm feeling fancy!

6月20日に、「日本のいいもの、おいしいものポストカードブック」が発売スタート!上質な厚紙を利用して、おいしいフードイラストが24枚収録。本として、ハガキとして、そして壁に飾るインテリアとして楽しめる一冊ができました。
2022年に出版した「日本のいいもの おいしいもの」が4回も重版され、韓国語、スペイン語、台湾語版もできました。このポストカードブックは「姉妹書籍」として、一部作品を再編集して、新しい作品やコラージュもたくさん入っています。ぜひみなさんに手に取っていただきたいです💖

This book is a companion to my first book “The Wonderful and Delicious in Japan,” which is now on its fourth reprint in Japan with additional Spanish, Korean, and Taiwanese adaptions. This new book features some of the same illustrations plus new ones, redesigned into collages and colorful prints. It was a passion project, so I hope you all can get your hands on it.
