4. Allow to cool slightly (about 5 minutes).
5. Stir in the Rice Krispies and marshmallows.
6. Pour into the prepared pan and spread the mixture to the corners.
7. Chill in the fridge for 3 hours, or until set.
8. Lift the bars out of the pan using the overhang of the parchment and place on a cutting board. Slice into bars.

1 cup unsalted butter, softened
1/2 cup cocoa
3-4 cups powdered sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
3-4 tablespoons milk or cream

1. Beat the butter until fluffy.
2. Turn the mixer down to low speed and beat in 2 cups powdered sugar. Once combined, beat in high speed for 10 seconds.
3. With the mixer on low speed, beat in the cocoa, vanilla and salt.
4. Mix in the rest of the powdered sugar about 1/2 cup at a time, alternating with 1 tablespoon of milk/cream.
5. Once the desired sweetness is reached, beat for 10 seconds on medium-high speed.

Makes enough for 12-18 cupcakes

8 Oz dark chocolate
1 cup unsalted butter
2 cups white sugar
2 teaspoons vanilla extract
3 large eggs
3/4 cup all-purpose flour
1/2 cup cocoa
1/4 teaspoon salt
1 1/2 chocolate chips

1. Preheat the oven to 350F and line a 9x13 inch pan with parchment
2. Chop the chocolate into small pieces.
3. Add the chocolate, butter and sugar to a large, microwave safe bowl.
4. Microwave for 45-second intervals on medium power, stirring between each, until smooth.
5. Whisk in the vanilla, then the eggs 1 at a time.
6. Gently stir in the flour, cocoa and salt.
7. Stir in the chocolate chips.
8. Pour the batter into the prepared pan and smooth the top.
8. Bake in the preheated oven for 32-37 minutes, or until an inserted toothpick comes out clean or with a few damp crumbs.
9. Cool fully, then life out of the pan using the parchment paper and dice on a cutting board.

I’m just a fudgy chocolate bundt cake, drizzle in chocolate, sitting on a plate, and waiting for the recognition I deserve. Seriously, layer cakes can take a back seat.

1 3/4 cup all-purpose flour
3/4 cup cocoa
2 teaspoons baking soda
1/2 teaspoon salt
2 cups caster sugar
1/2 cup vegetable oil (or canola)
2 large eggs
2 teaspoons vanilla extract
1/2 cup buttermilk
1/2 cup sour cream
1/3 cup boiling water

1. Preheat the oven to 350F.
2. Brush a 12-cup capacity bundt pan with pan release.
3. In a large bowl, whisk together the flour, cocoa, baking soda and salt.
4. In a separate large bowl, beat together the oil, sugar, eggs, vanilla, sour cream and buttermilk.
5. Carefully beat the dry ingredients into the wet ingredients.
6. Very carefully whisk in the boiling water.
7. Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick some sour clean.
8. Cool in the pan for 20minutes, then carefully invert the pan onto a wire rack.

6. Spoon the batter into the lines muffin tin, filling each about 1/2 full.
7. Bake 1 sheet at a time for 18-22 minutes or until the tops are slightly firm to the touch, or an inserted toothpick comes out clean.

Soft, chewy, fudgy, delicious. I’m a double chocolate kind of girl when it comes to cookies

1 cup all-purpose flour
2/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter - softened
3/4 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla extract
1 large egg
1 cup chocolate chips

1. Whisk together the flour, cocoa, baking soda and salt.
2. In a separate large bowl, beat together the butter and sugars until fluffy.
3. Beat in the egg and vanilla.
4. With the mixer on low, beat the flour mixture into the butter about 1/2 at a time. The dough will be thick.
5. Stir in the chocolate chips.
6. Cover the bowl and refrigerate for at least 3 hours.
7. When ready to bake, remove the dough from the fridge. Preheat the oven to 350f and line baking sheets with parchment or baking mats.
8. Form the dough into balls about 3 tablespoons each and place 2 inches apart on the cookie sheets.
9. Bake 1 sheet at a time for 12- 14 minutes, or until the tops are just set. Optionally, place a few chocolate chips on top of each cookie right when they come out of the oven.

Note - for smaller cookies, form the dough into balls about 1 tablespoon each and bake for 8-10 minutes.

Creamy, dreamy, no-bake strawberry cheesecake is tangy, made with REAL berries (nothing artificial here) and has an Oreo crust. It honestly reminds me of strawberry soft serve 🍦, or like a tangy strawberry milkshake.

Crust
30 Oreo Cookies
6 tablespoons butter - melted

Filling
1 lb strawberries - cored and sliced
1/4 cup white sugar
1 packet gelatine (enough for 500ml liquid)
1 1/4 cup whipping cream
24 oz full-fat cream cheese
3/4 cup powdered sugar

Crust
1. Crush the cookies (wager and filling) in a food processor.
2. Mix in the melted butter.
3. Press into the bottom and about 1/2 way you the sides of a 9-inch springform pan. Pop in the fridge as you make the filling.

Filling
1. Purée the strawberries.
2. Push through a metal sieve to remove the seeds.
3. Add the purée and 1/4 cup sugar to a saucepan and bring to a gentle boil while stirring until the mixture is about 1/2 the original volume.
4. Sprinkle in the gelatine, give it a stir, and remove from the heat.
5. In a large bowl, beat the whipping cream until still peaks form.
6. In a separate large bowl, beat the cream cheese and powdered sugar until smooth.
7. Beat in the cooled strawberry mixture.
8. Gently fold the whipped cream into the cream cheese mixture.
9. Spoon the mixture over the crust and smooth the top.
10. Place in the fridge for at least 6 hours for the cheesecake to set
