Snow Fungus Salad aka Collagen Salad😏🍄‍🟫🥒

Did you know snow fungus is low in calories and big on hydration?💦It’s usually found in desserts and soups, but if you prefer savory, this recipe’s for you!!🌶️

✎ Ingredients:
*2 snow fungus
*3 mini cucumbers (smashed)
*150g shimeji brown mushroom
*2 cloves garlic (diced)
*1-2 small red chilies (sliced)
*a handful of cilantro (diced)
*2 tbsp soy sauce
*2 tbsp black vinegar
*1 tsp brown sugar (can use up to 2 tsp)
*1-2 tbsp sesame oil
*1-3 tbsp chili oil (based on spice tolerance)
*optional- a pinch of salt

Directions:
1. Rehydrate snow fungus in room temperature water for 30mins or until it looks like a loofah.
2. Trim core off, cut into bite size pieces.
3. Wash mushrooms and blanch snow fungus and mushrooms for 5 mins.
4. Smash cucumbers into bite size pieces. Lightly salt the smashed cucumbers for 10 minutes to draw out excess moisture, then drain and set aside.
5. Drain and let cool slightly before mixing with sauce.
6. In a bowl, add snow fungus, mushrooms cucumbers, chilies, garlic, and the sauce ingredients.
7. Toss well until everything is evenly mixed.
8. For maximum flavor, cover and refrigerate for 30–60 minutes.

My healthy version of Japanese Cream Stew🥦🌽🥕🧄🍲

You can make this light and brothy or thick and creamy. Both is very good, just depends on your mood😜 I was sick so I preferred the lighter version, but my family loved the thicker consistency more!

✎ Ingredients:
*chicken breast or thighs
*butter or oil
*1 onion (sliced)
*half bulb garlic (diced)
*potatoes (bite size pieces)
*carrots (bite size pieces)
*broccoli (finely chopped)
*corn
*flour
*chicken broth
*milk or heavy cream
*optional- corn starch slurry to make the thick consistency similar to chowder
*seasonings- salt, pepper, fish sauce, white pepper, garlic powder, and Japanese chili

➡️Use 1/2 tbsp flour to 1 cup broth if using cornstarch slurry
➡️Use 1 tbsp flour to 1 cup broth if no cornstarch slurry

Directions:
1. Cook chicken in butter on medium heat, season with salt and pepper.
2. When chicken is halfway cooked, add sliced onions and sauté for 3-5 mins.
3. Add carrots, potatoes, and flour, cook until the flour is translucent.
4. Add in chicken broth until it covers all the vegetables. Let it come to a boil then turn heat to low and let it simmer for 30 mins.
5. Skim any foam out.
6. Add in broccoli and corn. Let it come to a boil then bring to a simmer.
7. On low heat, add in milk/heavy cream to taste. Let it simmer for 20-30 mins.
8. Season with salt, white pepper, and fish sauce.
9. Optional- add a cornstarch slurry until you get a thick consistency you like

As for the protein and vegetable ratios, you can add as little or as much of each ingredient you like. This soup is very flexible and can be made to your tastebuds!😜😜

1️⃣Suica- This is a rechargeable IC card you can add to your phone!💴 I used it to tap in and out of trains and buses, pay at vending machines, and even some convenience stores. You can add this to your apple wallet which made getting around way easier.🚞💺🚆

2️⃣Kuli Kuli- Perfect for translations!!📕You can take a photo or upload one and it translates the photo/menu for you! I usually snapped a pic while waiting in line so I already knew what to order by the time I got to the front😏🍽️ It also works for ingredient translations and receipts! Love this app so much since it helped me double check payments and reading labels, but what I appreciated most was the cultural context. Kuli Kuli felt like a personal cultural guide!🇯🇵✨

3️⃣Japan Travel (NAVITIME)- Super helpful for planning routes and day today travel. You can select your destinations, compare train options, see travel times, and browse sample itineraries all in one place. I used this a lot when planning day trips outside of Tokyo🚙🚖

Potatoes + cheese never miss!🥔🧀 If you want an easy and fun appetizer to make, you gotta try this!!😮‍💨

✎ Ingredients:
*Little Potato Co Little Yellows
*cheddar cheese slices
*shredded cheese (blend of cheddar, mozzarella, and monterey or plain cheddar)
*optional- black pepper
*marinara sauce of your choice

Directions:
1. Boil Little Yellows according to package directions or until fork tender. Drain and let it cool down.
2. Once the potatoes have cooled, gently smash potatoes until thin.
3. On a parchment lined sheet, place a slice of cheddar cheese (about the same size of the smashed potatoes). Top with the potato, and another layer of shredded cheese.
4. Optional- sprinkle with black pepper.
5. Bake at 400F for 10-12 mins then air-fry at 275F for 10 mins or until golden crispy.
6. Serve with marinara sauce.
