Burnt Basque cheesecake… but make it Dubai chocolate style! 😉💚🤎

I’m really not into hopping onto trends tbh, but at this point it’s safe to say enough time has passed that it doesn’t feel like a trend anymore, or that’s what I tell myself… 🤣

My wife had been asking me to make a burnt Basque for a few weeks, and we had a neighbor’s farewell, so perfect excuse to make a decadent dessert.
.
I kept the cheesecake classic in structure, flavored with pistachio paste. Super caramelized outside, center still creamy and borderline custardy… but set on a chocolate base packed with a feuilletine I made out of phyllo dough and crushed roasted pistachios. The contrast of textures and flavors was amazing…
.
That said, I’m not 100% happy and already thinking how I’ll improve it next time…
Definitely keeping the feuilletine/pistachio crunch, but will be adding it as a fudgy insert into the cheesecake itself, and simplify (or eliminate) the base so the chocolate is protected inside. I’ll also keep the internal temperature a couple degrees lower for extra creaminess at the center…

And then, let’s talk about… the strawberries 🍓
I had never seen this kind at the market: white, barely blushed, insanely sweet. I couldn’t not use them, plus pistachio & strawberry is one of those combinations that just makes sense…

Basically a savory, cheese-based choux pastry, light, airy, and something you can fill with whatever suits your fancy!

In this case I chose smoked salmon & cream cheese for some, and Boursin with bell pepper for the rest…Simple, classic flavors that just work… 😉

So the next day after making those vanilla conchas that I really loved, I felt I was on the right track and wanted to push it a little further with chocolate (my wife’s and my favorite kind).

The small tweaks I made to the recipe (and just chocolate’s magic) turned into one of the best things I’ve ever baked… and honestly the best conchas I’ve ever had. They look beautiful and taste oh-sooo-good!!🤤🤤

No recipe is ever truly final, so I’ll probably keep experimenting (maybe a tangzhong, longer resting, who knows)… but if this were the version I had to bake forever, I’d be more than happy with it lol.

One thing is for certain though: 1️⃣ I’m going crazy with flavor variations in the near future 2️⃣ I will most definitely not turn this into #myConchaObsession so you probably won’t hear about it for a while 🤣🤣🤣

My son’s favorite pan dulce has always been the concha (especially vanilla), so I decided to surprise him for “breakfast”… not too hard since, like a true teenager, he doesn’t wake up before 11am 😂 (a blessing for the home baker).

A little backstory: conchas are one of Mexico’s most iconic sweet breads, instantly recognizable by their crunchy, shell-like topping. For me, a good concha means a soft, brioche-style crumb that’s never dry, just sweet enough, and topped with a thick, crackly sugar crust.

The hardest part? Waiting for them to cool just enough before tearing into one straight out of the oven.

Nothing says welcome home (…and happy birthday) like Cochinita Pibil 🌮🇲🇽

My brother came down to visit and since the trip happened to coincide with his birthday, I threw him a special Mexican lunch. Because if there’s one thing we Mexicans miss the most when we’re away, it’s authentic Mexican food.

Cochinita Pibil is one of those dishes full of history. Technically, for it to be true “pibil,” it should be cooked in a pib… an underground oven dug into the earth, where the meat is slow-roasted over hot stones, covered with banana leaves, and left to cook until tender and smoky. This tradition comes from the Maya, who combined the elements of earth, fire and water to create something truly unique.

I’ve never cooked this in an actual pib and most likely never will, but the spirit of the dish, that mix of achiote, citrus, spices and slow cooking, was very much there. You eat it in tacos with pickled red onions and salsa de habanero, on fresh blue corn tortillas… out of this world good! 🤤🌮

I first discovered cardamom over 20 years ago through Indian food during our honeymoon. I had never tasted anything like it: potently fragrant, resinous, slightly citrusy, warm, almost a bit minty and fresh all at once. It became one of my favorite spices, and luckily it slowly became more and more available in Mexico…

It wasn’t until about a year ago that I came across Swedish cardamom buns or kardemummabullar, though, and that took my love affair with cardamom to a whole new level.

These things are dangerous! 🤣 Crispy on the outside, soft and pillowy inside, and packed with intense cardamom flavor. I could eat them every day.

Since this has turned into a full-blown addiction, it became clear I had to start baking my own, and after a few (delicious) test batches, I’m really happy how these last ones turned out… Just sweet enough, buttery and seriously packed with cardamom flavor! Now I have to improve my twisting and shaping skills, but thinking how often I’m planning on making these, I’ll master that by the end of next week… 🤣🤣🤣

Tomates provençales – another one of those humble, sun-kissed dishes my grandparents used to make very often, and which are now a big favorite at home too. A few ingredients, nothing fancy, just ripe tomatoes, good olive oil, herbs, a crisp topping, and the kind of flavor that lingers (in the palate and in the memory😉).

I added some green onions that remind me of calçots, and suddenly the whole thing feels like a little fête in the South.

“Ensaladilla Rusa” — but make it haute cuisine.
The rather humble ensaladilla (tuna, potatoes, green peas, French beans, carrots, hard-boiled eggs, mayo, etc.) got the VIP treatment—and there’s a story behind this one.
.
This is a reinterpretation of a dish my grandmother used to make for her Christmas table. She would meticulously decorate a whole red snapper covering it with mayonnaise, and simulating the fish scales with shrimp.
.
I found this beautiful vintage copper mold at a flea market and immediately thought of her dish. It felt like the perfect opportunity to pay tribute to her cooking, giving it a twist by adapting it to the ever-popular ensaladilla rusa.
.
I made a fish fumet aspic to set all the decorative details of the fish—using shrimp for the scales, bell peppers for the fins, and a single olive for the eye—and then prepared a mayonnaise collée to bind the ensaladilla and make the molding and unmolding easier.

So, Spanish food prepared the french way! (for those in the know, the background audio is by a French band famous for their Spanish music 😉)

“Pimientos del piquillo rellenos”
Made a 10-course (give or take) lunch consisting of tapas, pinchos, montaditos, and other Spanish classics for dear friends. The weather was just right for this (mostly) garde-manger style spread. I’ll be posting more dishes soon, but please forgive the quick pics—friend gatherings should be about the friends, not a full-on photo shoot, right? 😬
And sure enough, the food was good but the company was better!

These sweet piquillo peppers were first fire-roasted to remove their skin and lightly cook them. I filled them with two different mixtures: a mousse-style salmon filling and a creamy and tangy goat cheese one (the latter for everyone but my wife, who loves peppers but has a goat cheese vendetta😅). A warm, pepper-rich sauce ties it all together—because there’s no such thing as too much bell pepper flavor! 😂😂😂

A bit of history: Piquillo peppers originate from the region of Navarra in northern Spain. Traditionally roasted over open flames, they’ve been a staple of Basque and Navarran cuisine since forever —often stuffed with seafood, cheese, or meat. Their sweet, delicate flesh and deep red color makes them both beautiful to plate and delicious.
