Behind Ron Gastrobar is Ron Blaauw, one of the most decorated chefs in the Netherlands. He earned two Michelin stars at his old restaurant, and then, in 2013, he handed them back. He thought fine dining had gotten too serious, so he opened this instead; a place where the cooking stays sharp but the atmosphere stays fun.

We came for the Ron Royale lunch menu on a sunny afternoon. It opens with an oyster cart wheeled up to your table, moves through course after course of playful, ambitious cooking, and lands you back on the Amstelveenseweg terrace with the rest of the day still ahead of you.

We spent an afternoon at Meesterslijpers in Amsterdam learning to sharpen our own - first on the steel, then on a whetstone, with the people who do this for a living, surrounded by a showroom of blades from Japan to just down the road. We even brought our own knives. They were, it turns out, embarrassingly blunt.
Then came the test: soak the stone, find the angle, the same stroke a hundred times - and a tomato, to settle whose knife came out sharper. Mine sliced clean. Tom’s took a few goes. I won. I’m aware how rarely that happens.
This is what a food experience actually looks like. Not a restaurant. Not a tasting menu. Just a stone, some water, and the oddly satisfying moment a blade finally bites.

My friend told me T Nakameguro was the best thing he’d ever eaten. So I flew to Tokyo to find out why. Twelve counter seats, an open kitchen, and one full course built entirely around Omi Beef - one of Japan’s oldest and most refined Wagyu varieties. They don’t just serve it. They show you everything. The cut, the flame, the preparation - right in front of you.
Truffle and T-bone soup. Wagyu and blue fin tuna tartar. Lobster with Omi beef bolognese. A sukiyaki. A palate cleanser. And then - course seven. The T-bone.
I’ve had Wagyu before. In Amsterdam, in London, in restaurants that charge serious money for it. This is not that.
They followed it with a ramen made from the bones. Then handed us a take-home gift on the way out. Apparently ten courses wasn’t enough.

We’ve been to a lot of wine bars in Amsterdam. Most give you a good list and food you forget about by the next morning. Bottleshop on Wibautstraat does something different - they call it “conventionally incorrect,” and after eating nearly the entire menu, we finally understood what that means.

We put on wading suits, walked into the Oosterschelde, and shucked our own oysters with a private guide at the Oesterij in Yerseke, a family-run oyster farm that’s been working this water since 1906. Mine opened clean. Tom took considerably longer.
Then a fruits de mer we weren’t expecting. Then back to for a wood-fired hot tub that we lit the moment we got back and didn’t leave until midnight.
