実はいろは堂のおやきの生地は、フランスパンにも使われるオートリーズ法で仕込んでいます。オートリーズ法とは、粉と水を軽く混ぜ合わせた状態でしばらく休ませ発酵させる製法のこと。
小麦粉にそば粉を配合した秘伝の生地をじっくり寝かすことで、小麦粉のおいしさを引き出し、焼きあがった生地にボリューム感と香ばしさが生まれます。
