Matcha and other Japanese green teas technically won’t spoil. However, they will gradually lose their freshness over time.

In general, you'll want to avoid exposure to:

We like to store our matcha at room temperature, sealed in the bag in came with, in a dark cupboard away from spices and other powerful aromas.

Beyond daily matcha 🌿

Catch a glimpse of an annual ritual at Kitano Tenmangu in Kyoto, where the tea harvest is inspected, whisked as a sublime bowl of matcha, and then presented as an offering.

Earlier this month, we joined Chairman and President of Ippodo at Kenchasai, a ceremony with origins in the 16th century.

The head of Ippodo has acted as sairyō (tea inspector) in this ritual since the current President’s great-grandfather.

Koma-mukashi 🐴

Every year, this limited matcha is released in time for New Year’s and the important first tea ceremony of the year, hatsugama.

Beyond the tea ceremony, it’s also a perfect matcha to share with a friend on a cold, blustery day over the holidays.

For the year of the horse 2026, the name of the blend is Koma-mukashi- "Koma" means horse in Japanese.

Enjoy this year’s dew-like sweetness and billowy umami most purely by preparing it straight, just with water. Latte fans will find that adding your milk of choice will make it incredibly smooth, round, and unobtrusive.

Sparkling Gyokuro ✨

Feather-light, for a highly-drinkable introduction to gyokuro.

Try this one if you love matcha: gyokuro is grown in the same shaded fields, and the two have overlapping notes. Savory, evergreen, misty.

Brewed cold and finished with fine bubbles, it’s eminently refreshing.

📝 The Recipe:
• Cold brew gyokuro: 2 Tbsp leaves / 4 oz of cold water / 15 min brew. Strain.
• Fill a tall glass with ice, and add 1.5 oz cold brew.
• Top off with sparkling water. Lift the ice once or twice to gently mix.
Enjoy while fresh and effervescent.

Hearty, but fresh and verdant, this classic Japanese tea warms and revitalizes us from within.

Brewed in small portions with a rich taste, for slow sipping.

Tips
• Use 2 Tbsp, to rebrew: a classic brew uses a healthy amount of leaf and a short brew time, allowing many re-steepings.
• Alternate pours back and forth, to make sure the flavor in both cups is the same.

Balanced, creamy, and a good pairing for cookies.

Tips
• Keep the base concentrated: 1:1 matcha to milk.
• For clean layers, pour matcha last: slowly, directly onto one ice cube.

📝 The Recipe:
1. Make matcha: sift 6 g (4 chashaku scoops or 3 tsp.) matcha into a wide bowl, and whisk with 6 - 7 oz water (176°F) for 15 seconds.

Optional: After 15 sec, slowly whisk the foam on top for microfoam.

2. Build: In each glass, add plenty of ice and 3-4 oz cold oat milk. Pour the matcha on top slowly, stir, and enjoy!

⭐ We used oat milk (round, creamy) and the Ikuyo blend (balanced, clean bite).
