These meat filled pockets are a popular family favorite. Combine it with some sumac marinated onions and arugula salad, and you’ve got yourself a wholesome meal sorted. 😋😋

You can use your leftover rotis/chapati to make this. Also freezer friendly so you can put this on your meal prep plan. What more you can ask from a recipe?

➡️ ARAYES RECIPE (makes 8)

• 800 gm minced beef (20% fat)
• 1 big onion
• 2 cups parsley (30 g)
• 2 cups coriander (30 g)
• 3 cloves garlic
• 2 green chilies
• Spices: 1 tsp cumin powder, 1/2 tsp black pepper powder, 1/4 tsp cinnamon powder, 1 tsp coriander powder, 1 tsp paprika powder, 2 tsp salt
• 4 labanese flatbread (or roti)
• some oil for greasing

1. In a chopper, chop the onion, parsley, coriander, garlic and green chilies until fine.
2. Add it to the minced meat along with all the spices and salt. Mix and knead it until well combined.
3. Cut the flatbread into two equal parts. Separate the outer layer and fill it with a thick and even layer of the meat filling.
4. Brush the flatbread with some oil on the top and cook it on a pan on medium heat for 2-3 minutes on each side until crispy on the outside and cooked through on the inside.
5. Serve with some sumac coated onions and spicy green chutney.

I promise you’ll start to love avocados if you try them this way. My children literally fight over who gets to lick the bowl. 😜

👉🏼Pro tip: Pick ripe avocados by pressing them gently with your thumb. It should give in slightly. If your avocados aren’t ready yet, you can leave them on the countertop for a day or two.

• 2 ripe avocados
• 1/2 tsp ground cumin
• 1/2 tsp ground paprika
• 1/4 tsp garlic powder
• 1/4 tsp salt
• 1/4 tsp pepper
• juice of half lemon
• optional- 1 chopped tomato
• optional- 1 chopped small onion
• optional- a handful of chopped coriander

🥑 Split the avocados in half, remove the seed and scoop out the flesh. Mash with a fork.
🥑Add all the spices (and vegetables is using). Mix until thoroughly combined.
🥑Serve as a dip with crackers or chips, spread over sourdough toasted bread or with eggs.

Say hello to Wild Garlic Daal – a cozy Indian twist on foraged greens! Recipe ⬇️🌿💛

Made with moong daal, warming spices & that fresh wild garlic punch.
Wholesome, comforting & perfect with rice or chapati.

Skip the pesto – spice it up instead! 🌶️🫶

• 50g wild garlic (Bärlauch)
• 150g moong dal
• 1/2 tsp red chili powder
• 1/2 tsp turmeric powder
• 1/2 tsp salt
• 500 ml water
• 2 Tbsp ghee
• 1 tsp cumin seeds
• 2 green chilies
• 2 tomatoes
• 1/4 tsp salt

1. Soak the wild garlic in water mixed with a teaspoon of soda bicarbonate (baking soda) for 15 minutes then rinse it a few times.

2. Wash the moong dal thoroughly and add it to a pot or a pressure cooker. Add the red chili, turmeric, salt and water. Cook until the dal is cooked but still grainy (don’t overcook otherwise it will get mushy).

3. Heat ghee in a pan and fry cumin seeds and green chili for a minute. Add the tomatoes and season with salt. Saute for a few minutes then lower the heat and cover for about 5 minutes until the tomatoes are soft.

4. Add the cooked dal into the pan and mix. Leave it to simmer on lowest heat until you finely chop the wild garlic.

5. Add the wild garlic and switch off heat. Cover and leave it to rest for 5 minutes before serving. Enjoy with rice or chapati.

Kali daal (brown lentils) with raw mango used to be a dish that my mother made during monsoon season (recipe below). She served it with mint chutney over basmati rice. The combination of the earthy flavors of brown lentils work so well with sour mango.

INGREDIENTS
For the daal:
200 grams (1 cup) brown lentils (sabit masoor)
2 small raw mangoes (peeled and roughly diced)
1 tsp coriander powder
2 cloves garlic
½ tsp turmeric powder
½ tsp red chili powder
1 tsp salt
8-10 mint leaves
800 ml (2½ cups) water
For the tarka:
2 Tbsp olive oil
2 cloves garlic (sliced)
1 tsp cumin seeds

INSTRUCTIONS
1. Add all the daal ingredients into a pot/ pressure cooker. Cook until tender. If cooking in a pot, it will take about 20-30 minutes. If using a pressure cooker, it will take about 10-12 minutes.
2. Mash the daal using a potato masher. If you prefer a very smooth consistency, you may use a stab mixer to puree the daal. Set aside.
3. Heat a pan/skillet on medium heat and add oil. Once hot, add the sliced garlic and fry for about 2 minutes, stirring continuously. Once the garlic starts to get a golden color, add the cumin seeds and fry until they start to crackle (about a minute). Add the tarka to the daal (be careful as it might splatter) and stir to combine.
4. Serve over basmati rice or brown rice, along mint chutney.

➡️ MASALA CUBES (makes 15 big cubes)
• 3 Tbsp oil
• 3 medium brown onion
• 1 1/2 tsp cumin seeds
• 2 Tbsp ginger-garlic paste
• 2 Tbsp tomato paste
• 6 medium tomatoes
• spices: 6 tsp coriander powder, 3 tsp turmeric powder, 3 tsp kashmiri red chili powder

1. Heat the oil in a skillet on medium heat. Sauté the onion until they turn golden brown.
2. Add the cumin seeds and sauté for a minute.
3. Add the ginger-garlic paste and tomato paste, along with a sprinkle of water. Sauté for about 2 minutes.
4. Add the tomatoes and the spices. Mix and lower the heat. Cover and cook for about 20-25 minutes, stirring every 5 minutes. If it the mixture starts to stick to the bottom, sprinkle some water and continue cooking. Mash the tomatoes with the back of your spatula once they turn soft and mushy.
5. Uncover and cool for another 8-10 minutes until all liquid has evaporated and the mixture turns glossy.
6. Leave to cool down for a few minutes before transferring to an ice cube tray for easy portioning. Once the masala cubes are frozen, transfer them to a sealed bag and store them for up to 2 months in the freezer.
