Creamy Pesto Pasta
Ingredients:
1 lb pasta of choice
2 cups fresh basil
1/3 cup pine nuts
1/2 cup Grana Padano, plus more for serving
2 cloves garlic
Juice of 1/2 lemon
1/3 cup olive oil
1/2 cup heavy cream
1/2 to 1 cup reserved pasta water
Salt and pepper, to taste
Directions:
Bring a large pot of salted water to a boil and cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
While the pasta cooks, add basil, pine nuts, Grana Padano, garlic, lemon juice, and olive oil to a food processor. Blend until smooth.
Return the drained pasta to the pot over low heat. Stir in the pesto and heavy cream.
Add reserved pasta water a little at a time until the sauce reaches your desired consistency.
Season with salt and pepper to taste.
Serve topped with additional Grana Padano and enjoy.
