1 can Corned Beef
1 medium Onion (large dice)
1 plum Tomato (large dice)

1 tablespoon Olive Oil
1 tablespoon Ketchup
Instructions:
1. Open the can using the key or a can opener.
2. Remove the beef with a fork or spoon and set it aside on a plate.
3. Heat oil in a skillet over medium to high heat.
4. Sauté onions and bell peppers until translucent.
5. Add tomatoes and scotch bonnet peppers; cook until fragrant, then add the beef and break it apart to your desired consistency.
6. Stir in black pepper and ketchup (optional) until well combined.
7. Heat until the beef is no longer solid. Serve with rice or your choice of sides (bread, dumpling, plantains, etc.).
**For an added layer of flavor and nutrition, consider incorporating cooked cabbage into this dish. Simple 1-Pot Vegetable Broth Recipe
Prep Time: 10 minutes
Cook Time: 45-60 minutes
Ingredients:
1 tbsp olive oil
2 large onions, chopped (keeping skins on for added color)
4-5 cloves garlic, smashed
4 carrots, chopped
4 stalks celery, chopped
8-10 cups water
1 bunch fresh parsley
